There is nothing better than a rich piece of creamy, smooth, decadent fudge and this easy Pumpkin Fudge is no exception. I’ve added butterscotch to the mix to create a fudge reminiscent of pumpkin pie with caramel undertones. It’s easy to make and looks incredibly on dessert tables and cookie trays.

Pumpkin Butterscotch Fudge is the perfect thing for fall days and holidays. This fudge is really quite spectacular because it actually tastes like pumpkin! Now I have made many pumpkin fudge recipes that use vanilla baking chips and the pumpkin flavor is pretty light. Still delicious – just not PUMPKIN.

This fudge is made with butterscotch chips and the very first flavor you taste when you pop a creamy square into your mouth is actually pumpkin. The butterscotch intensifies the pumpkin flavor and adds an element of complexity to the fudge. Pumpkin pie spice makes this fudge smell as amazing as it tastes. I used pecans in the recipe for a little texture but if you’re a fudge purist and are anti-nuts – feel free to omit them from the recipe. Or sub in walnuts – that would be awesome too!

  • pumpkin pie spice

Pumpkin Butterscotch Fudge

Ingredients

  • 2 1/2 cups granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter
  • 1 cup half-and-half
  • 1/2 cup canned pumpkin
  • 3/4 tsp pumpkin pie spice
  • dash of ground cloves
  • 12 oz butterscotch chips
  • 7 oz marshmallow creme
  • 1 tsp vanilla extract
  • 1 cup chopped pecans or walnuts optional

Instructions

  • Line an 8-inch or 9-inch square pan with foil.
  • Butter the foil generously and set aside.
  • Bring sugars, butter, half-and-half, pumpkin, and spices to a boil over medium to medium-low heat in a heavy-bottomed 5 quart pot, stirring frequently.
  • Continue cooking, stirring constantly, to the soft ball stage using a candy thermometer, about 235F. I use this digital candy thermometer and highly recommend it!
  • Remove from heat and stir in butterscotch chips until fully melted. This takes several minutes.
  • Add the marshmallow creme and stir until blended.
  • Add the vanilla and nuts and stir until combined.
  • Pour into prepared dish and cool.
  • Cut into squares and store in an airtight container.

    After reading you experience with learning to start your new car I just wondered if you have gotten out of your car and walked away from it and it still running. Be sure you turn the motor off. It’s easier then you may think to be distracted by thoughts and kids and not notice the car is still running.

    Your recipes are just wonderful, thank you! But this comment is for your safety. I too became ” dependent ” on my key fob. I attached all of my necessary keys to one chain and dropped them in my purse, they became a nuisance and since I didn’t need them to start my car, I just left them there! I left the bakery one day, and was immediately joined by two women who escorted me across the street, and “requested” any money I could give them for a soda! I knew they left behind a man and another woman, who were watching us! To make a long story short—- the situation was resolved quickly, without trouble! If I had my keys in my hand, I would have engaged the alarm, and felt some protection! The bakery is in a small city, and the Main Street is approximately a mile long. I have never seen anything like this here! I have always felt safe! I ALWAYS keep my car keys in MY HAND NOW!! Please be safe, and learn from my experience, it doesn’t matter if you are alone or with your children, when your hands are full, you are more vulnerable!

    I don’t have the keyless start, but after I got my iPhone 5, I expected everything I logged into to read my thumbprint.

    This fudge will be a must try for us this year. We might even get to work it into a school project on pumpkin.

    This fudge looks amazing! I have a bonfire tomorrow, and we are suppose to bring a dessert. Trying this out and bringing it…if it sets up:/ I have a track record with fudge!
