This easy Pumpkin Delight dessert features four layers of creaminess, fall flavor and amazing texture. This easy to prepare pumpkin dessert is a great make ahead dessert for the holidays!

This dessert recipe is based off of my Key Lime Pie Lush. It features four tantalizing layers of varying flavors and textures that combine for an irresistibly delicious pumpkin dessert. I only wish all of my Thanksgiving desserts were this easy to make!

We are huge fans of pumpkin recipes and I love making them starting in the early fall and throughout the holiday season. This particular recipe is so easy to pull together that you won’t want to wait until Thanksgiving to make it. It’s that good!

What You’ll Need

This recipe is made up of four easy layers: a graham cracker crust, no bake cheesecake layer, pumpkin pudding, and whipped topping layer. As always, you can find the full printable recipe in the recipe card at the end of this post. Let’s take a quick look at what you’ll need to make this pumpkin dessert:

Graham Cracker Crust Layer

  • finely crushed graham cracker crumbs
  • salted butte
  • granulated sugar

Cheesecake Layer

  • cream cheese 
  • powdered sugar
  • vanilla extract
  • cool whip

Pumpkin Pudding Layer

  • pumpkin pie spice instant pudding
  • whole milk

Top Layer

  • cool whip
  • chopped pecans
  • pumpkin pie spice or ground cinnamon

How To Toast Pecans

Preheat oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat. Spread pecan halves out in a single layer. Bake for 5 to 8 minutes, stirring occasionally and keeping a close eye on the nuts. Remove from the oven, let cool, and then chop.

How To Make Pumpkin Delight

There are four easy layers in this pumpkin delight recipe. Let’s take a look at how quickly it comes together.

Graham Cracker Crust Layer

  1. Combine graham crackers, melted butter and granulated sugar.
  2. Press the graham cracker crumble evenly into baking dish and bake for 6 to 8 minutes.
  3. Let cool completely.

No Bake Cheesecake Layer

  1. Beat cream cheese until smooth and creamy. Add the powdered sugar and vanilla extract and continuing beating until combined.
  2. Fold in cool whip into the cream cheese mixture.
  3. Spread the cream cheese mixture over top of the graham cracker layer.

Pumpkin Pudding Layer

  1. Combine the pudding and milk and follow the pudding box instructions.
  2. Spread the pudding mixture over the cream cheese mixture carefully and evenly using an offset spatula.

Top Layer

  1. Spread the Cool Whip evenly over top of the pumpkin pudding mixture.
  2. Sprinkle the chopped pecans and dust with pumpkin pie spice.
  3. Chill the Pumpkin Delight for a minimum of 8 hours or overnight before serving.

For nice, clean pieces, consider freezing the dessert for an hour before slicing and serving. Clean your knife after each cut for the most beautiful presentation.

Pumpkin Delight FAQs

How should this be stored? Keep covered and refrigerated.

  • Refrigerator. This dessert can be refrigerated for up to 4 days.
  • Freezer. Cover tightly with plastic wrap, then foil and then store in the freezer for up to one month.

Can I make this ahead? Yes! This is a great make ahead dessert (which is why you’ll love this for Thanksgiving)! Since it needs to set up overnight, you can make it at least one day ahead and up to 4 days in advance.

What can I substitute for pumpkin pie spice? Substitute 1 teaspoon of ground cinnamon, 1/4 teaspoon of ground ginger and 1/4 teaspoon nutmeg.

Ingredients

Graham Cracker Crust Layer

  • 1½ cups graham cracker crumbs finely crushed
  • 6 tablespoons salted butter melted
  • ⅓ cup granulated sugar

Cheesecake Layer

  • 8 ounces cream cheese softened
  • ⅔ cup powdered sugar
  • ½ teaspoon vanilla extract
  • 8 ounces cool whip thawed

Pumpkin Pudding Layer

  • 6.8 ounces pumpkin spice instant pudding (2) 3.4 ounce boxes
  • 3 cups whole milk

Top Layer

  • 16 ounces cool whip thawed
  • ¼ cup chopped pecans toasted
  • 1 teaspoon pumpkin pie spice or ground cinnamon

Instructions

  • Preheat oven to 350°F. Lightly spray nonstick cooking spray in a 9×13 baking dish and set aside.

Graham Cracker Crust Layer

  • Stir together graham crackers, melted butter and granulated sugar in a medium bowl.
    1½ cups graham cracker crumbs, 6 tablespoons salted butter, ⅓ cup granulated sugar
  • Press the graham cracker crumble evenly into the prepared baking dish and bake for 6 to 8 minutes.
  • Remove the graham cracker crust from the oven and let cool completely.

No Bake Cheesecake Layer

  • In a large bowl or the bowl of a stand mixer, beat the cream cheese until smooth and creamy. Add the powdered sugar and vanilla extract and continuing beating until combined.
    8 ounces cream cheese, ⅔ cup powdered sugar, ½ teaspoon vanilla extract
  • Fold in 8 ounces of cool whip into the cream cheese mixture.
    8 ounces cool whip
  • Spread the cream cheese mixture over top of the graham cracker layer.

Pumpkin Pudding Layer

  • In a large mixing bowl, combine the pudding and milk, following the pudding box instructions.
    6.8 ounces pumpkin spice instant pudding, 3 cups whole milk
  • Spread the pudding mixture over the cream cheese mixture carefully and evenly using an offset spatula.

Top Layer

  • Spread the Cool Whip (16 ounces) evenly over top of the pumpkin pudding mixture.
    16 ounces cool whip
  • Sprinkle the chopped pecans and dust with pumpkin pie spice.
    ¼ cup chopped pecans, 1 teaspoon pumpkin pie spice
  • Let the Pumpkin Delight chill in the fridge for a minimum of 8 hours or overnight to allow it to set properly before serving.
