Chicken Stir Fry

If you are looking for quick and easy weeknight dinners, and I mean, who isn’t? Stir fry dinners are the way to go. You get your protein, your veggies, your everrrything in one skillet and less than 2o minutes later, the fam is at the table eating a healthy dinner. Can you say winning?

I am a huge fan of one skillet dinners and make them at least a few times each week. Meals like Cheesy Kielbasa, Rice and Broccoli Skillet, 20 Minute Skillet Chicken and Spinach Parmesan, and 20 Minute Skillet Monterey Chicken are what get me through the week, sanity intact.

This chicken stir fry is about as easy as it gets. It starts with some cubed chicken breast, although chicken thighs also work well. I like to start with the chicken when I’m making a stir fry because as they brown, they create a layer of flavor in the skillet. When the veggies get added, the pick up some of that flavor and then develop their own. It’s these layers that give so much depth to this easy recipe. And then it’s time for the sauce…

Chicken Stir Fry Sauce

I feel like the sauce can be often overlooked when making stir fry. It’s really what gives the dish so much flavor and pulls the entire meal together. The sauce I used for this stir fry is what makes it the best chicken stir fry recipe.

It’s a combination of these simple ingredients:

  • Honey – for a touch of sweetness which makes this chicken stir fry universally loved by adults and kids alike.
  • Toasted Sesame Oil – gives this dish some Asian flair. The oil is very strong so you don’t want to go crazy here.
  • Soy Sauce – it’s just not a stir fry without soy sauce! Great flavor but make sure to buy low-sodium!
  • Chicken Broth – this will thin out the sauce a bit and add some flavor.
  • Corn Starch & Water – creates thickness in the sauce when brought to a boil at the end.
  • Crushed Red Pepper Flakes – completely optional but adds great flavor and a bit of a kick to the dish.

Each ingredient plays a crucial role in the stir fry sauce so you really don’t want to leave anything out.

The fresh veggies and simple, delicious sauce are what really sets this stir fry apart from others. While it can be tempting to just use a bag of frozen stir fry mix, if you can, fresh is best.

What Kind of Vegetables Do You Put In Stir Fry?

I used one of my favorite stir fry veggies in this recipe, broccoli, along with carrots and peppers. You can use virtually any vegetable in a stir fry including snow peas, green beans, mushroom, onions, sugar snap peas, and green onions.

My boys are big time broccoli fans which came as a complete and total shock to me years ago when this revelation first came to light. Needless to say, they were a bit on the jealous side when I had the opportunity to visit an Earthbound Farm Organic broccoli farm a few weeks back, thanks to my ongoing partnership with Safeway.

I have been on several farm trips so far and let me tell you, they are always so eye opening. Lordy! So much work you guys! Chicken Stir Fry Recipe

Ingredients

  • 1 lb boneless, skinless chicken breast cut into 1 inch cubes
  • salt and pepper to taste
  • 2 tbsp olive oil divided
  • 2 cups broccoli florets
  • 1/2 yellow bell pepper cut into 1 inch pieces
  • 1/2 red bell pepper cut into 1 inch pieces
  • 1/2 cup baby carrots sliced
  • 2 tsp minced ginger
  • 2 garlic cloves minced

Stir Fry Sauce

  • 1 tbsp corn starch
  • 2 tbsp cold water
  • 1/4 cup low sodium chicken broth
  • 3 tbsp low sodium soy sauce
  • 1/4 cup honey
  • 1 tbsp toasted sesame oil
  • 1/2 tsp crushed red pepper flakes

Instructions

Stir Fry Sauce

  • In a medium size bowl, whisk together corn starch and water. Add remaining ingredients (chicken broth, soy sauce, honey, and toasted sesame oil, red pepper flakes) and whisk to combine. Set aside.
  • Add one tablespoon of olive oil to a large skillet or wok and heat over medium high heat.
  • Add chicken (in batches if necessary) and season with salt and pepper. Cook for 3 to 5 minutes or until cooked through. Remove from skillet.
  • Reduce heat to medium and add remaining tablespoon of oil to the skillet.
  • Add broccoli, bell pepper, and carrots and cook, stirring occasionally, just until crisp tender. Add ginger and garlic and cook for an additional minute.
  • Add chicken back into the skillet and stir to combine.
  • Whisk stir fry sauce and pour over chicken and vegetables and stir gently to combine.
  • Bring to a boil, stirring occasionally, and let boil for one minute.
  • Serve with rice and/or chow mein if desired.

    This was a great recipe. I’ll preface everything with the fact that I’m a former cook, and half Korean.

    I thought that I hated stir fry. When most people make it, it’s stupid bland. This was delicious. The sauce was the perfect.

    The only mods that I made was light s&p at every step, and sriracha instead of red pepper flakes. Also added kim chi 🤫

    I have tried a different stir fry sauce recipe every single time I have made stir fry for the past six years, and they were all bland somehow. This is finally IT!! The biggest difference I noticed is that you cook the ginger and garlic with the veggies instead of mixing them into the sauce. Thank you so much for sharing!

    This was delicious! It’s definitely going in the rotation! I didn’t have fresh ginger, so I used ground ginger and I didn’t look up a conversion or measure, so I eyed it and it could have used a little more, in my opinion, but that was my fault. I only used a squirt of honey (I have a sensitivity) . My family loved it!

    Every once in a while, I just need to eat food with chopsticks. Maybe because we lived in China for 2 months? This was absolutely delicious! I followed the recipe with the following subs (note to self, always read through the recipe TO THE END), no yogurt, subbed heavy cream. Added Thai Basil and lemon balm. Hubby LOVED it. This is going in the recipe book for future chopstick days!

    Made this recipe for the second time tonight and my family loves it. I leave out the red pepper flakes until after I scoop some out for the 11 year old. Also with the garden producing so much zucchini right now this time I added some of that in place of the carrots which I was out of. Just as tasty with the modification!

    What a great recipe!
    I cooked it with ease and it turned out perfect.
    My step-son stopped by, he was hungry. But he doesn’t eat certain things like, ginger, and bell peppers.
    Guess what! He loved it. He said that he eats out all the time, never came accross such a good taste.

        My husband and I love this recipe. I don’t measure the amount of vegetables, I just add a lot of whatever I have, but always bell peppers and sweet yellow onion and broccoli . Then maybe carrots, mushrooms and snap peas. I always double the sauce since I use a lot of veggies. The sauce is absolutely wonderful. If you prepare the sauce a little ahead of time and cut all the veggies a head of time, it is so fast to prepare when you are ready to eat .

      The honey balances that out. It’s not spicy at all in my opinion but you can reduce or omit entirely from the recipe if you prefer. Enjoy!

    This was great! We love it and it’s so fast to put together. I have a large garden and I grab what ever veggies I have. So I have added all kinds of veggies to this. Bok Choy, Napa cabbage, snap peas and mushrooms to name a few. Also I add water chestnuts adds a nice crunch to it.

    So good. I did tweak the recipe a bit reduced the amount of honey added baby corn and sugar peas and let it cook in the sauce for 10 minutes to really let it come together. Only other thing I’d change for next time is a little less crushed red pepper.

    I’m new to “the kitchen” and looking for easy, tasty recipes. This was super easy and tasty. My husband and teenage step-sons have a limited pallet, but we all really enjoyed this recipe! I made a few adjustments – rather than 3 TBSP of Soy Sauce, I used 1.5 TBSP of SS and then used 1.5 TBSP of Bragg Liquid Aminos (which is healthier than soy sauce, but basically tastes the same). I also doubled the chicken and broccoli. I think next time I’ll double the sauce to cover the extra bulk from chicken and broccoli.

    I used a pre-chopped veggie mix from Trader Joe’s and this recipe flew. I also added some edamame that needed to be used up and it was fantastic. The sauce is the highlight! Serve it up with some brown rice and use have a super nutritious meal.

    It sounds appetizing, but I’ll have to skip it. The 1/4 cup of honey is a deal-breaker for me. My husband just suffered a heart attack, so I’m making some changes to what I cook for us. In particular, I’m getting rid of high-carb dishes and replacing them with low-carb.

    Best stir fry recipe out there. I previously have bought a stir fry seasoning pack from the local grocery store.     Hi. My husband and I both have health issues. He is diabetic. So whenever I find foods that are good for us and he loves it, I try to use it regularly. I had made stir fry a couple of times without a recipe b/c I had some sesame oil that was given to me. I liked it but thought I should see what else should be done. This recipe was great. My husband and I loved it. I make once every a couple of weeks. Thank you so much.

    Not only did me and my husband live this but my parents did as well. I did use all fresh produce plus I added bean sprouts and water chestnuts to my stir fry and it turned out beautifully!

    I also made this for my company’s pot luck and it really was a big hit!

    Absolutely wonderful! I know a good stir-fry when I taste one 🙂 This is by far the best recipe for the dish that I’ve tried. I steamed the broccoli and carrots in the microwave for two minutes so I wouldn’t have to cook them long in the frying pan. Also, I didn’t want a really sweet stir-fry just a hint so I lessened the honey and also the sesame oil (it can be over powering). I love heat, though, so I went heavy on the crushed red pepper flakes. This was perfect for me, and definitely a keeper on the weekly meal plan rotation. I am also going to try different variations like veggies (only) and different proteins. Thank you so much for sharing!!!!

    Made this tonight with my teenage daughter the receipe was quick and easy and fun to make together. The end result was absoulty fabulous so so tasty. A new favourite in our house my daughter was so happy because she’s always looking for tasty easy receipes for when she goes off to college next year…Thank you so much for sharing can’t wait to try your other receipes!

      I want to make this!! But we love noodles more than rice, do you recommend more sauce if I plan on adding noodles in the mix?

        You can double the sauce recipe if you like it more saucy, regardless of whether you want noodles or rice served with it.

    I have made this three times and it is delicious! I use the peppers, carrots, onions, sugar snap peas and water chestnuts…and add a little sriracha into the sauce. Thank you for this recipe!!!!

      This is by FAR , my favorite stir fry recipe! I have to make it every week with varying vegetables and proteins, and add a little more of the red pepper flakes because I like things spicy. (Step mom is Thai so I grew up on spice/heat!)

    Loved it! I was in a hurry and steamed the veggies a bit in the microwave before adding them to the pan. Added extra ginger – because it’s amazing – and also doubled the chicken and the veggies. Served it with brown rice. Absolutely delicious!

    This is a personal message to you Ms Trish…I am addicted to your recipes and have never tried a single one. I’ve subscribed to your page for daily ideas and print most of them off…One day I plan to make a recipe book of them. Both my husb. and have health issues and can’t get around to cook these days and so we have Jenny Craig meals every meal. They really aren’t bad and just require heating up and we both need to lose weight. But the day things change, your recipes are ready and waiting. You must be a pro photographer or have a pro taking the pictures as they are so beautiful and tasty looking…I don’t know how you have the time and energy to test so many and keep up this wonderful recipe spot, but I for one, truly appreciate your efforts… Keep up the good work…

    Should the sauce be thick? My came out a bit watery. Maybe not enough corn starch? Anyways it was delicious and I will make again and try to work harder on the sauce. Thanks

      You could add a touch more or let it simmer a little longer and it will thicken up some more. So glad you enjoyed the recipe!

      Actually, yes. The sesame oil adds a TON of flavor to this dish so don’t leave it out.

    So easy and delicious. I just added more pepper flakes cuase we like it spicy. This will be something I make from now on when craving chinese. Do you know a good recipe for chow main? My kids just like the noodles but I cant find a recipe I like.

    This is a terrific recipe- very easy to cook and a great result, – very popular in my house…no leftovers…Loved the marinade….I added lots of veg – as found in the fridge on the day – peppers onions peas carrots. Was a hit . I made it twice so far.

    I must say if you can gather all of the ingredients, mix them and chop them up in 8 minutes you are very well organized and quick with a knife.

    Anyway, about the recipe……..It’s a definite keeper. I am not sure if my new cast iron wok had anything to do with this but it was great. The sauce was the best and this was the best stirfry recipe I have made. Thank You for the recipe!!!
