The BEST Fluffy Buttermilk Pancakes you’ll ever try – promise! This easy to follow pancake recipe yields super delicious and totally amazing pancakes every time! So much better than a box mix! All you need is to top them with maple syrup and you’re good to go. Make sure you whip up a batch of baked bacon (check out my how to bake bacon guide here) to serve alongside these delicious buttermilk pancakes!

Buttermilk Pancakes

I take my breakfast seriously. Like, very seriously. Breakfast is my favorite meal of the day, with dessert, obvi, coming in a close second. If you asked my family what my “specialty” was in the kitchen, it would be breakfast, for sure.

I love it all: waffles, french toast, casseroles, sausage gravy, biscuits, eggs anyway I can get ’em, muffins, and pancakes, glorious pancakes. Man do I love pancakes. My Nana had the most amazing pancake recipe and then she’d make her own maple syrup and it was poured, piping hot, on top of a hunk of butter and the fluffiest buttermilk pancakes and my life was complete.

The Secret to the BEST Pancakes

The secret ingredient to pancakes is buttermilk. I’ve had millions of pancakes in my time and tried many pancake recipes. Thee very best of those were made with buttermilk. There is the trick of adding vinegar to milk to make your own buttermilk and while this is an adequate substitute, I think the real thing is better for sure. But honestly, use what you have on hand. I use buttermilk for a lot of recipes like Buttermilk Ranch Oven Fried Chicken and Chicken Fried Steak.

With Mother’s Day on the horizon, I wanted to make sure were equipped with the BEST fluffy buttermilk pancakes recipe out there…this one. I mean, just look at them!

Tips for Making the Best Pancakes

  • I like to use a griddle when making pancakes. It’s much more efficient and an easier way to feed the masses, i.e, my growing boys.
  • Don’t over mix the pancake batter. Small lumps are perfectly acceptable!
  • Give your batter a little time to rest after mixing it together. I use this time to preheat the griddle, set out plates, get my syrup warming, etc.
  • Serve your syrup warm, if not hot. It helps the butter melt and spreads all that awesomeness all over the place.

I don’t know about you, but I think breakfast for dinner should be a weekly occurrence with these pancakes as the star of the show.

The BEST Fluffy Buttermilk Pancakes you'll ever try! This easy to follow pancake recipe yields super delicious and totally amazing pancakes every time!

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 tablespoons granulated sugar
  • 2 cups buttermilk
  • 2 large eggs lightly beaten
  • 1 teaspoon vanilla extract optional

Instructions

  • Whisk together the dry ingredients in a large bowl or, as I frequently do, a large glass measuring cup.
  • Whisk in the buttermilk, eggs and vanilla extract just until combined. Some small lumps are okay.
  • Let pancake batter rest for 10 minutes.
  • Heat a large skillet or griddle over medium heat.
  • Spray with non-stick cooking spray OR brush with butter or oil.
  • Ladle 1/3 - 1/2 cup batter onto the griddle for each pancake.
  • Flip the pancakes over when small bubbles appear on the surface and continue cooking on the opposite side until golden brown.
  • Serve with butter and syrup.

    Thank you so much for this recipe!!!
    I made these buttermilk pancakes this morning, and I dropped a lot of small frozen blueberries onto the uncooked side right after pouring the batter. The pancakes came out soooo light and fluffy and the taste was perfect. What an amazing treat on a Sunday morning.

    Honest to God these are literally the best pancakes I ever made. Letting the batter rest for 10min is key. I will never buy pancake mix again!!!

    Has anyone ever tried a buttermilk substitute. I don’t think I have ever even had buttermilk in my fridge. I was just wondering if they worked. This would be a great help because all the best pancakes have buttermilk. I can’t wait to try them!

    I made these this morning since I had some buttermilk to use up. This recipe was very good and easy to make! The batter must rest for at least 10 minutes for them to be so fluffy. I made most of the batter as regular pancakes and then I added some cinnamon to some of the pancakes to change the flavor…mostly because my son is a big fan of it.

    Second time using this recipe…. great, times two! I’m a family of one now, so i freeze the left overs in stacks of three, easy pull out, quick and hearty breakfast. Growing up, we didn’t use buttermilk, so I was not a fan of pancakes. Using real buttermilk makes all the difference. Really best ever, and not too much mess or work. I just hand wisk, and not too much. Thanks for posting. It is a go-to recipe, for sure.

    OK the fact that I can adjust the number of pancakes and the recipe adjusts itself automatically is the coolest feature I have seen on recipe websites. Thank you for doing this. The maple syrup is ready, now it is time to get to flippin’.

    These turned out great and fluffy. I was surprised. I used a recipe similar to this before but with additional coconut oil. I was skeptical to omit the oil but these turned out even fluffier. Thanks for sharing!

    I have been making homemade pancakes for my family for years. I have tried numerous recipes, some better than other. I am now throwing away all of the other recipes. This is by far the absolute best pancake recipe. I could tell that they would be light and fluffy just by how the batter looked. Excellent! My only question is do you have a similar recipe for pancakes without buttermilk, just in case I don’t have any?

    I have been making pancakes for many years, but they never turn out like IHOP. I came across your recipe and decided to give this a try. WOW!!!! These pancakes were FLUFFY and DELICIOUS.     I have been wanting to make these pancakes ever since I saw a pic of them on instagram. I finally made them today and Oh. My. GoodGraciousFluffiness! These were the best pancakes I’ve ever had (my family agrees). They truly deserve the title of The Best Fluffy Buttermilk Pancakes. I followed the recip but did half granulated sugar and half brown sugar. Thank you for bringing these amazing pancakes into my life! (My family thanks you too!).
