The BEST Fluffy Buttermilk Pancakes you’ll ever try – promise! This easy to follow pancake recipe yields super delicious and totally amazing pancakes every time! So much better than a box mix! All you need is to top them with maple syrup and you’re good to go. Make sure you whip up a batch of baked bacon (check out my how to bake bacon guide here) to serve alongside these delicious buttermilk pancakes!

Buttermilk Pancakes

I take my breakfast seriously. Like, very seriously. Breakfast is my favorite meal of the day, with dessert, obvi, coming in a close second. If you asked my family what my “specialty” was in the kitchen, it would be breakfast, for sure.

I love it all: waffles, french toast, casseroles, sausage gravy, biscuits, eggs anyway I can get ’em, muffins, and pancakes, glorious pancakes. Man do I love pancakes. My Nana had the most amazing pancake recipe and then she’d make her own maple syrup and it was poured, piping hot, on top of a hunk of butter and the fluffiest buttermilk pancakes and my life was complete.

The Secret to the BEST Pancakes

The secret ingredient to pancakes is buttermilk. I’ve had millions of pancakes in my time and tried many pancake recipes. Thee very best of those were made with buttermilk. There is the trick of adding vinegar to milk to make your own buttermilk and while this is an adequate substitute, I think the real thing is better for sure. But honestly, use what you have on hand. I use buttermilk for a lot of recipes like Buttermilk Ranch Oven Fried Chicken and Chicken Fried Steak.

With Mother’s Day on the horizon, I wanted to make sure were equipped with the BEST fluffy buttermilk pancakes recipe out there…this one. I mean, just look at them!

Tips for Making the Best Pancakes

  • I like to use a griddle when making pancakes. It’s much more efficient and an easier way to feed the masses, i.e, my growing boys.
  • Don’t over mix the pancake batter. Small lumps are perfectly acceptable!
  • Give your batter a little time to rest after mixing it together. I use this time to preheat the griddle, set out plates, get my syrup warming, etc.
  • Serve your syrup warm, if not hot. It helps the butter melt and spreads all that awesomeness all over the place.

I don’t know about you, but I think breakfast for dinner should be a weekly occurrence with these pancakes as the star of the show.

The BEST Fluffy Buttermilk Pancakes you'll ever try! This easy to follow pancake recipe yields super delicious and totally amazing pancakes every time!

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 tbsp granulated sugar
  • 2 cups buttermilk
  • 2 large eggs lightly beaten
  • 1 tsp vanilla extract optional

Instructions

  • Whisk together the dry ingredients in a large bowl or, as I frequently do, a large glass measuring cup.
  • Whisk in the buttermilk, eggs and vanilla extract just until combined. Some small lumps are okay.
  • Let pancake batter rest for 10 minutes.
  • Heat a large skillet or griddle over medium-high heat.
  • Spray with non-stick cooking spray OR brush with butter or oil.
  • Ladle 1/3 - 1/2 cup batter onto the griddle for each pancake.
  • Flip the pancakes over when small bubbles appear on the surface and continue cooking on the opposite side until golden brown.
  • Serve with butter and syrup.

    I NEVER write reviews on any recipe I use, it just never crosses my mind. This recipe was amazing, I 100% recommend. I like baking or just making anything when I’m bored and I had left over buttermilk from another recipe and I was really craving pancakes, apparently so was the rest of my family. The pancakes were so fluffy and so flavorful, of course I had to also add chocolate chips. This recipe will go down as my first 10/10 by everyone who had them and myself in my recipe book that I started at the beginning of the year. I will definitely be using another recipe from this website! Great recipe a must!

      I SO agree. I’ve never rated a recipe or left a comment before but these were PERFECT. Yum!!!! I have never used buttermilk before, but happened to buy some to make a dressing. My husband wanted pancakes this morning, so i decided it was time to try buttermilk pancakes. So glad i picked this recipe.

    Holy cow! I made these for the first time recently in the search for a perfect pancake recipe, and I struck gold with this recipe. The exterior is crisp, the inside is plush and fluffy, and the toppings and add ins are endless! To anyone making- do not substitute the buttermilk for regular milk, the buttermilk is what makes these so outstanding!

    I’ve tried many different pancake recipes over the years and in my opinion, this is the best recipe I’ve found. The batter isn’t too sweet and the pancakes were super fluffy; but filling. Thank you for sharing this recipe!!!

    They really are the best pancakes (and waffles!) we’ve ever had! I usually use Bread flour to add to the fluffy factor.

    Question: has anyone tried baking these as muffins before? I’m going to try it this weekend (doubling the recipe for extra-large muffins) but I wasn’t sure if anyone had had any luck with it already or had recommendations for adjusting any ingredients. Thanks!

    I made an ‘oopsie’ and thought I had more buttermilk. I fell short one cup and added whole milk to make up the balance. My 92 year old mom loves chocolate chip pancakes so I added some mini-morsels to hers. Even with my boo-boo, all you heard was moaning and yummmying! Thanks so much for making our New Years 2021 a great way to start the year!

      This is my go-to, always-faithful recipe. I ran out of buttermilk and used regular – turned out great. I used made them gluten-free by using Cup-4-Cup GF flour – turned out great. No matter what, this recipe never fails. If I could give 100 starts, I would!
