The BEST Fluffy Buttermilk Pancakes you’ll ever try – promise! This easy to follow pancake recipe yields super delicious and totally amazing pancakes every time! So much better than a box mix! All you need is to top them with maple syrup and you’re good to go. Make sure you whip up a batch of baked bacon (check out my how to bake bacon guide here) to serve alongside these delicious buttermilk pancakes!

Buttermilk Pancakes

I take my breakfast seriously. Like, very seriously. Breakfast is my favorite meal of the day, with dessert, obvi, coming in a close second. If you asked my family what my “specialty” was in the kitchen, it would be breakfast, for sure.

I love it all: waffles, french toast, casseroles, sausage gravy, biscuits, eggs anyway I can get ’em, muffins, and pancakes, glorious pancakes. Man do I love pancakes. My Nana had the most amazing pancake recipe and then she’d make her own maple syrup and it was poured, piping hot, on top of a hunk of butter and the fluffiest buttermilk pancakes and my life was complete.

The Secret to the BEST Pancakes

The secret ingredient to pancakes is buttermilk. I’ve had millions of pancakes in my time and tried many pancake recipes. Thee very best of those were made with buttermilk. There is the trick of adding vinegar to milk to make your own buttermilk and while this is an adequate substitute, I think the real thing is better for sure. But honestly, use what you have on hand. I use buttermilk for a lot of recipes like Buttermilk Ranch Oven Fried Chicken and Chicken Fried Steak.

With Mother’s Day on the horizon, I wanted to make sure were equipped with the BEST fluffy buttermilk pancakes recipe out there…this one. I mean, just look at them!

Tips for Making the Best Pancakes

  • I like to use a griddle when making pancakes. It’s much more efficient and an easier way to feed the masses, i.e, my growing boys.
  • Don’t over mix the pancake batter. Small lumps are perfectly acceptable!
  • Give your batter a little time to rest after mixing it together. I use this time to preheat the griddle, set out plates, get my syrup warming, etc.
  • Serve your syrup warm, if not hot. It helps the butter melt and spreads all that awesomeness all over the place.

I don’t know about you, but I think breakfast for dinner should be a weekly occurrence with these pancakes as the star of the show.

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 tablespoons granulated sugar
  • 2 cups buttermilk
  • 2 large eggs lightly beaten
  • 1 teaspoon vanilla extract optional

Instructions

  • Whisk together the dry ingredients in a large bowl or, as I frequently do, a large glass measuring cup.
  • Whisk in the buttermilk, eggs and vanilla extract just until combined. Some small lumps are okay.
  • Let pancake batter rest for 10 minutes.
  • Heat a large skillet or griddle over medium heat.
  • Spray with non-stick cooking spray OR brush with butter or oil.
  • Ladle 1/3 - 1/2 cup batter onto the griddle for each pancake.
  • Flip the pancakes over when small bubbles appear on the surface and continue cooking on the opposite side until golden brown.
  • Serve with butter and syrup.

    I’ve actually never commented on a recipe before I’ve never made homemade pancakes. These are super easy to make and I just made it all in one bowl which is so nice. They were really fluffy but you definitely should wait 10 minutes before you start making them in the griddle or skillet. This recipe is a keeper.

    My kids wanted pancakes for breakfast and I found this recipe on the internet. They came out perfect! Fluffy and delicious. Even my husband and I — who aren’t big on pancakes — loved them. Everyone had seconds. This will be our go to recipe.

    I have tried many pancakes and these ones are probably my favorite ever! They are so simple and you get an amazing fluffy pancake. Add butter and maple syrup and you’re all set. Definitely saving this recipe!!

    I seldom make pancakes these days but wanted to do something special for my husband while sheltering at home. I had some buttermilk to use up so I looked up best ever buttermilk pancakes and found this recipe – wow these pancakes are light, fluffy and delicious! I made half the recipe for the two of us and will definitely make again….this one is a keeper!

        Hands down, this is greatest of pancake recipes omg… I’ve never seen my husband and kids devour their pancakes so quickly! I was shocked at how yummy, fluffy and moist these are.

        Quick question for the noob I am – can I store the unused batter in the fridge?

          You can but I honestly think it’s better to make the pancakes and then just reheat quickly in the microwave or in a skillet. The pancakes aren’t as fluffy when the batter is refrigerated for too long.

    Enjoyed your buttermilk pancakes. Easy and fluffy. Only had 1 3/4 c. buttermilk but added a 1/4c milk with it and all was fine. Made too many for us and loved it. Put some in the freezer for another time. A time for more buttermilk pancakes and no messy pans and bowls. Yea!

    First time making buttermilk pancakes and this recipe was great. I was disappointed at first because the first batch off the griddle was very thin. But after that they got fluffy. Think waiting 10 minutes to let the batter settle is important. Will keep this recipe for the next time I need to use up buttermilk.

    Easy to make, fluffy and very filling! My boys loved them! Using a 1/2 cup for ladling made for some rather large pancakes. I may try the 1/3 cup for ladling next time.

    Best pancakes I’ve ever had. Sooo fluffy, light, and flavorful. I doubled the recipe to feed a large group and everyone raved about them. I used full fat buttermilk and so had to add a couple extra splashes so the batter wouldn’t be so thick, but they turned out perfect!

      Have used this recipe over and over. It’s awesome! I seldom have buttermilk on hand so use milk and curdle it with vinaigre. Works great. Today I used Kefir. My pancakes turned out fluffier than ever. Kudos for the recipe!
