Does anyone else remember the KFC Buffets?? I remember going to the KFC buffet during high school and it was like heaven. My mom would take me there after a volleyball game or maybe a track meet and I would eat ridiculous amounts of food. Now that I think about it, I wonder if I was the reason they stopped the buffet??

I think this is about the time that my love affair with their coleslaw began. It’s completely ruined me for all other coleslaw. Oh, I’ve tried other coleslaw – of course! But it just isn’t the same. So sweet and a little bit tangy – coleslaw perfection!

I’ve been known to eat the entire family meal coleslaw by myself. Hands off people! No shame here. None. Now of course I can’t always make it over to KFC and making it at home is the next best thing. It’s easy too! Now I’m going to tell you the coleslaw secret: You have to let it chill for at least 2 hours. The longer the better. This stuff just gets better by the day.

This coleslaw is the perfect side dish for almost any sandwich and is amazing with pulled pork. I made this coleslaw to accompany our Spicy Pulled Pork Popper Sandwiches and it was divine!

When you first combine the ingredients you’re going to start doubting me. Don’t. It’s going to look a lot “dryer” thank KFC coleslaw at first. Let it chill and then you’ll see. Trust me.

Ingredients

  • 1/2 cup mayonnaise I use light
  • 1/4 cup buttermilk
  • 1 1/2 tbsp apple cider vinegar
  • 2 tbsp lemon juice fresh is best
  • 1/3 cup sugar
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1/2 tsp celery seed
  • 16 oz shredded bagged cole slaw mix

Instructions

  • Whisk together all the ingredients except for the shredded cole slaw mix.
  • Add the bag and mix until nicely blended with the dressing.
  • Refrigerate 2-3 hours (or longer).
  • Mix well again just before serving.

    There are still 2 KFC buffets here in southern California that i know of. I used to pig out on mac and cheese and their biscuits. 🙂 Oh man, now i want some crispy strips, potato wedges and a biscuit!!! I’m going to give the recipe a try 🙂

    I love love love KFC cole slaw and, like you, could make a meal out of it. I’m definitely going to try this one because it appears to be much healthier then the recipe I use now but supposedly, the one I use is an authentic KFC recipe but has waaaaay too much sugar in it in addition to Miracle Whip which has its own health issues http://www.recipelink.com/msgbrd/board_14/2005/MAR/16646.html

    I feel the same way about KFC coleslaw! I have a similar copycat recipe as you’ve posted but mine calls for 1T. Minced onion and no celery seed and variable amounts of the same ingredients as yours. It is almost spot on the same as KFC coleslaw!

    I have to admit – I’m not the biggest coleslaw fan, but on the rare occasion we have kfc, I always have to have coleslaw!! I’m sure I’d like this even better!

    this really looks great….I did notice that you’re using Mayo..I’ve seen copy cat KFC coleslaw before…and they used KRAFT MIRACLE WHIP (that’s the only time I ever bought that) and it was fairly close. I’m dying to try you’rs since it uses regular Mayo (Hellman’s/Best Foods all the way) thank you for this version…

    Hi Trish,
    I love KFC coleslaw. The only KFC in town closed a couple of years ago. I use to pick up a family meal and head over to the nearest park for a picnic. Good memories.
