Snickerdoodles are such a classic cookie. Easy to make, yummy to eat – what’s not to love? My boys, Reece in particular, are BIG Snickerdoodle fans. I actually have to hide the cookies from Reece to stop him from eating the whole batch! Crispy on the outside, chewy on the inside, these cookies are just delightful! Of course, any cookie dough rolled in sugar and cinnamon has to be good! Oh, and speaking of the dough, holy moly people! Don’t try it! You will not be able to stop yourself from eating way more than you intended. So. Sooooo. Good.
1/2 cup butter, softened
1/2 cup butter-flavored shortening
1 1/2 cups sugar
2 eggs, room temperature
1 Tbls vanilla
2 3/4 cups flour
1 1/2 tsp cream of tartar
1 tsp baking soda
1/8 tsp baking powder
1/4 tsp salt
4 Tbls sugar
4 tsp cinnamon
Cream the butter, shortening and sugar by hand. Add the eggs and vanilla and cream together. In a separate bowl, combine the flour, cream of tartar, baking soda, baking powder, and salt. Gradually add flour mixture to creamed mixture, stirring until well combined. Refrigerate dough for 30 minutes.
Preheat oven to 375 degrees. Combine sugar and cinnamon in a small bowl. Remove dough and form into small balls. Roll balls in sugar and cinnamon and place on an ungreased cookie sheet.
Bake for 8 minutes. Remove and let cool on sheet for two minutes before transferring to a cooling rack.
