There is something about summer that has me craving fresh, flavorful salads like no other time of year. There is such a bounty of fruits and vegetables readily available during this time and I want to enjoy each and every one.

This perfectly refreshing Pineapple Cucumber Salad is wonderfully easy to make and simply delicious! Great for summer BBQs, parties, potlucks and more! // Mom On Timeout

This particular salad is one of my favorites – especially for summer. I took my favorite pineapple salsa recipe, turned down the heat, made the cucumber and pineapple pieces larger and voila – the most refreshing, flavorful salad EVER.

I absolutely adore how the bright yellow of the pineapple contrasts so beautifully with the deep, dark green of the cucumber, cilantro, and lime zest. These pictures really do not do it justice.

The sweetness of the pineapple is balanced by the acidity of the lime and the crunchiness of the cucumber. This recipe is perfectly simple and can easily be scaled for a small dinner or to feed a crowd.

Ingredients

  • 1 pineapple chopped
  • 1 English cucumber chopped
  • 2 limes zested and juiced
  • ⅓ cup cilantro roughly chopped
  • salt and pepper optional

Instructions

  • Combine all ingredients and toss lightly to distribute the lime juice and zest evenly.
  • Season with salt and pepper if desired.
  • Serve immediately or keep chilled until ready to serve.
