Almost every weekend I whip up a batch of these easy homemade biscuits. It’s by far my favorite biscuit recipe and since it’s so easy, we make them all the time.
There is nothing quite like a warm, buttery, flaky biscuit straight from the oven that you can slather with butter and jelly, make into a biscuit breakfast sandwich, or enjoy with sausage gravy. I used to buy the mixes (and I’m sure I will pick up a box in the future again) but with a biscuit recipe this easy, it’s just as easy to make biscuits from scratch.
This easy biscuit recipe has never failed me and after much tweaking it is my go-to biscuit recipe. The biscuits rise up nice and fluffy and the copious amounts of butter ensure a tender, delicious biscuit each and every time.
What Ingredients Do I Need for Homemade Biscuits
Not a whole lot! And I’m pretty sure you have most, if not all, of these on hand in your pantry. The one ingredient you may see in this list that could be a little unfamiliar is the cream of tartar. I use it in my Snickerdoodles recipe and love it in biscuits but if you don’t have it on hand, please, don’t let that stop you from making this biscuit recipe. Go ahead and omit it from the recipe.
You’ll notice this list is very similar to the ingredients used in my scones recipe. My scones call for heavy cream instead of whole milk and a more substantial amount of sugar.
I should also note that my brother makes these biscuits every weekend and doesn’t use the egg, like, EVER. In fact, neither does my little sister. If you want to leave it out, go ahead.

Tips for Making Biscuits
- The secret to excellent biscuits is COLD BUTTER. Really cold. Many times the biscuit dough gets worked so much that the butter softens before the biscuits even go in the oven. You want to handle the dough as little as possible because we want that butter to stay cold.
- I use two methods tor incorporate the butter into the flour mixture.
- One is to cut the butter into small pieces, refrigerate or freeze until ready to use, and then use a pastry cutter to cut the butter into the mixture when ready.
- The second is grating frozen butter with a box grater and then stirring it into the flour mixture.
- Both work great so use the method you prefer. Don’t go too crazy here – you want to see small, pea-sized pieces of butter throughout the dough.
- To keep the butter from melting at all, use a cold egg and cold milk as well.
- The dough is going to be sticky so you want to generously flour the surface before turning your dough out onto it. I also sprinkle some flour on top before working with the dough.
- You can either use your hands to pat the dough out, or, if you prefer, use a rolling pin to very gently roll the dough out. I always just use my hands because at this point, they’re already a mess. If the dough is sticky, just sprinkle on additional flour, about a tablespoon at a time.
Can I Use Buttermilk in this Biscuit Recipe?
Yes, you absolutely can and we frequently do. Since buttermilk is thicker than regular milk, you will need slightly more to get the dough to the right consistency. Start with one and one-quarter cup and add more as needed.
To get a nice, tall biscuit, I like to pat the dough out to 3/4 to 1 inch thickness and cut with a biscuit cutter. I ended up with nine this time but depending on who is snacking on biscuit dough, I can get up to 12 biscuits.
Baking the biscuits is super quick – just about 10 minutes is all you need. I like to bake my biscuits on parchment paper but if you don’t have that on hand, lightly grease your baking sheet.
For extra yumminess, brush the tops of the biscuits with melted butter…
And serve with jams and jellies for a serious treat.
What You’ll Need to Make Biscuits
- A baking sheet that can handle the size of the scones.
- Biscuit cutter so you get nice evenly sized biscuits.
- Parchment paper makes removal of these biscuits painless and ensures they come off in one piece.
- A pastry cutter makes quick work of cutting the butter into the flour. Two knives or forks will also work or you can use a box grater.
- A pastry brush to brush on melted butter when the biscuits are hot from the oven.

How To Make Biscuits
Perfect Homemade Biscuits
Ingredients
- 3 cups all-purpose flour
- 3 tbsp sugar
- 1/2 tsp salt
- 4 tsp baking powder
- 1/2 tsp cream of tartar
- 3/4 cup COLD butter
- 1 egg
- 1 cup whole milk
Instructions
- Preheat oven to 450 degrees.
- The secret to excellent biscuits is COLD BUTTER. Really cold. Many times the biscuit dough gets worked so much that the butter softens before the biscuits even go in the oven. Try cutting the butter into small pieces and stick back in the fridge pulling out only when ready to incorporate into the dough.
- Combine the dry ingredients in a large bowl.
- Use a pastry cutter to cut cold butter into flour mixture. Don't go too crazy here - you want to see small, pea-sized pieces of butter throughout the dough.
- Add in the milk and egg and mix just until the ingredients are combined. The dough will be sticky but don't keep working it. You should be able to see the butter pieces in the dough.
- Turn the dough out onto a generously floured surface. Sprinkle some flour on to the top of dough so it won't stick to your fingers and knead 10-15 times. If the dough is super sticky just sprinkle on some additional flour.
- Pat the dough out to 3/4 - 1 inch thickness and cut with a biscuit cutter or glass. I ended up with nine this time but depending on who is snacking on biscuit dough, I can get up to 12 biscuits.
- Place the biscuits on a lightly greased baking sheet or parchment lined baking sheet and bake for 10 to 15 minutes or until golden brown on top.
- For extra yumminess, brush the tops of the biscuits with melted butter...

I have been on a life-long quest for the perfect biscuit recipe. I’ve tried a lot. These are as close as I’ve come! 🙂 I made as per the instructions… well except for the kneading part. Apparently I skipped over that. I did “knead” the dough somewhat, but probably not enough. They still came out fantastic! Mine were a little crumbly, but that could be the lack of kneading and I may have slightly overcooked them. I don’t care… they were still really good and soft with a nice crunchy outside. Maybe a tad too sweet for buscuits and gravy, but still really good! Thanks for the recipe!

I had been looking for a biscuit recipe that had a light, fluffy inside and a crunchy outside. This one fit the bill! The only ingredient change I made to the recipe was to use half and half instead of whole milk, as I had some I needed to use up. I sifted the dry ingredients together and used a box grater to grate frozen butter instead of cutting the cold butter into small pieces. I brushed melted butter on them when they came out of the oven and let them sit a few minutes before eating. These were delicious!

I think it might have more to do with the flour. It needs to be spooned into a measuring cup and level with a knife, not scooped out of a container because that packs a lot more flour into the measuring cup. That might be it?

These are the BEST!!!!!!!!!!!! I recently shared the recipe while standing in line at a local fruit and veggie market when I over heard two ladies talking about biscuits.
I cut my butter in small cubes and freeze it. I use a food processor and pulse the butter into the dry ingredients. This works like a charm. I then dump the mixture in a bowl to add the wet ingredients. The butter stays really cold and the biscuits are out of this world!

I just whipped these up.. 20 minutes and they were done from start to finish. I did this all with my Kitchenaid Mixer. Used the paddle to mix the dough and grated the frozen butter with grater attachment. Using the Mixer instead of my hands kept the dough cold. I dumped it on my cold floured marble counter.. patted it down with a spatula. The batter stayed cold the entire time and they came out amazing. I’m not trying any other recipe for biscuits again. Very good recipe; like the unusual tiny bit of sweetness. Have made my great grandmother’s biscuit recipe for years and we all still love them just like when she made them, but I have to say, this recipe of yours just may end up on the table more often than hers now. Grandma’s tip for never fail high rise biscuits was to chill the cut out unbaked biscuits for several hours or even freeze them before baking. The secret to her mile high biscuits was to place them close together (or even touching) in the baking pan. They have never failed to rise beautifully every time. Thanks again for the great recipe.

Hi Tish, I enjoy your recipes. Just thought I would pass on a little trick I do. You are so wright about the cold butter. I mix my dry & cut in the butter, put it in the freezer or the fridge and let the flour get colder. If I am making them in a day, I put them into fridge. I also like to have a couple in the freezer, for a later date. I move those to the fridge as I need them.

I’ve made a few different biscuit recipes and most come out very similar and not too much better than ones made from Bisquik or bought frozen at the store in my opinion. These were sooo much better! I do agree they had a very slight sweetness that I’m not used to but it was good. They’re very buttery and the texture was just right. I made with homemade sausage gravy and they were so good I had to eat one plain too. I had a few leftover and they’re definitely better warm from the oven, but what isn’t?

This was my first crack at made from scratch biscuits and these were so much easier than I thought they’d be and they turned out great! My family devoured the entire batch. The only thing I plan to change the next time I make them is reducing the sugar a bit. I made these to go with sausage gravy and to me, the biscuits were a little sweet for that combo.

I have used a different recipe every time I make biscuits for a year from crisco to buttermilk biscuits and this is officially my absolute favorite recipe. I made these biscuits to go with poached eggs and Hollandaise sauce the slight sweetness of the biscuit was the perfect balance to the mild tang of the sauce!!

You forgot to mention to not twist the biscuit cutter when cutting them out. Go straight down and then straight up, otherwise you lose all those layers of heaven.

I agree with other reviewers that this is the best biscuit recipe. I have certainly tried many! I have used it 3 times now. I will use this recipe exclusively now!
My preferred method is to grate the butter onto a plate and put that plate in the freezer for a few minutes. Then I mix the butter with the dry ingredients by hand.
I also pat the dough into a rectangle on my counter and cut it into squares or triangles so I don’t have to re-roll out the dough for the scraps.

I just made these biscuits. They are the BEST I have ever made. I told my family that I can cross that off my “Bucket”list. I have always been disappointed in my biscuits.(Grew up using Betty Crocker receipts. I did use buttermilk, as I have it and like it. The pan full went in a hurry when warm, with local honey. 5yr old Greatgrandsons got to learn how to use the “Honey Dipper”, and we all loved them! Buscuits are known as scones in the UK. We have these in the afternoon with clotted (extra extra thick) cream not butter topped with strawberry jam – known as A Devonshire Cream Tea. Try it – bet you’ll never swap back! great recipe but only brush the tops. If the sides are coated this stops them rising too!

You can but they are best fresh. If you do want to warm them up, wrap in a damp paper towel and heat in 10 second increments at 50% power so you don’t dry them out.

Check your baking powder – it might have expired. Also, your butter may not have been as cold as needed going into the oven. Hope that helps!

Another idea about why the biscuits might not have risen is how they were cut. If they’re cut with a cup instead of a biscuit cutter the edges will get mashed down instead of cut crisply. Source? Personal experience. ? I don’t have a biscuit cutter so I use my metal counter scraper thing (I can’t recall what it’s actually called. It’s about 6″ wide with a curled handle?) And make square biscuits. The cut edges rise much higher than the edge that was just hand formed.
I was coming here to comment that I just pulled these out of the oven. “These are the best biscuits I’ve ever made!” And my five year old says “they’re fantastic!”

Easy breakfast favorite. Made them for my daughter before she went back to college. I actually didn’t have whole milk, so I mixed some 1/2 and 1/2 with my skim milk. It worked. Also…I sifted the flour first. I don’t know if it helped, but it’s the way my mom made them. Quick question. Would you ever use self-rising flour? If so, what would you change the baking powder and salt?

Thanks Cynthia! Sifting the flour is always a great idea but usually people don’t have the time, that would be me lol! I’m too lazy. So yes, self-rising flour could be used. The baking powder would be reduced some but the salt I think would stay the same.

Just made these, in my food processor and with 1% milk – meaning that I only mostly followed the recipe and they turned out GREAT! I love biscuits, but as a So Cal gal I did not grow up making them, and have not been successful -ever. These are so yummy and perfectly biscuit-y. I just finished baking these. I love the texture (not crumbly) and flavor. I didn’t have any cream of tartar but found that I could substitute 1 teaspoon lemon juice or white vinegar in lieu of it. I also added a touch more milk to incorporate nearly all of the flour and then just flattened it by hand and cut them into squares – no messy cutting or dealing with scraps. So, thank you for this wonderful recipe. I will make these often!

I made these 2x and they didn’t rise either time. I got the butter REALLY cold…I sat it in the freezer for a little while. I didn’t have a pastrong cutter so I used 2 knites/folks to cut in butter. And my oven for fully heated to 450 degrees. Any idea what I did wrong?? They taste amazing but really want those beautiful fluffy biscuits. Help!

Sounds like you might need new baking powder. The butter has nothing to do with the rising – it’s for flavor and flakiness 🙂

This is a very old page so you may never see this. You can make your own buttermilk with just milk and white vinegar. 1 Tbl. vinegar to 1 cup of milk. Stir and let it sit for at least 5 minutes. Longer doesn’t hurt.

Was looking for a new biscuit recipe to try and landed on this one. Just took them out of the oven and they are a hit with the hubs! Success! I followed the recipe exactly. I did use a little trick I’ve learned over the years of making scones (which are VERY similar to biscuits in preparation). I put my sticks of butter in the freezer for about 15 minutes and then use a cheese grater to grate the butter before putting it back in the freezer for another 10 minutes or so. This just gives you very cold and small pieces that don’t require a pastry cutter to use. When I add the butter to the dry ingredients, I just use my fingers to sort of mix and press the butter into the flour. I also don’t bother making circular biscuits because I always end up over handling the dough. I’ve never figured out the trick to keeping the handling time down when making circles :(. So, I just pat my dough into a rectangle and then use a knife to cut square biscuits. Anyway, those are my tips for whatever they’re worth! Great recipe! Thank you so much for sharing :).

Despite my love of baking, being able to produce wonderful loaves of bread and famously delicious cookies, I have had a defective biscuit gene as long as I can remember! Seriously- every attempt at biscuits failed miserably. I kept trying though- and today I found success! These were simply wonderful. I followed the directions exactly and got the most perfect biscuit I have ever seen! I made sure to use super fresh baking powder and cream of tartar. This is KEY. Plus I barely kneaded the dough and gently pressed into a circle. I kept it thick so I only got 9 biscuits, but that’s enough for my family. I also baked them in a glass Pyrex so they would rise evenly. Thank you for sharing this amazing recipe and “curing” my defective gene!

I’m a complete novice at biscuit making (my few attempts were tragic), and I’m wondering if I need the tartar? Is it purely for flavor? I have none on hand, and if I can get away with it then I’d like to go without it, because I’m just too lazy to pack up 4 kids and go to the store! lol

We love these biscuits! Quick and easy and every time I’ve made them they come out great! I prepackage the dry ingredients in zipper bags to make these even faster. I also use margarine instead of butter and it works great.

I read somewhere that for pea-sized COLD butter, you should freeze the required amount and then grate it with a large size grater straight into the bowl. I haven’t tried it yet, but it seems like a good idea to me!

I made these for dinner last night. I easily made 14 biscuits. They were delicious!! I had to put something under the pan to catch butter dripping off the sides of my baking stone. Will make again for sure!!

My Mom taught me how to make biscuits many years ago. The secret is ice cold butter, adding an egg and kneading. I place my biscuits close together on the baking sheet. I bake mine @ 400*F for 12 minutes. Never had a problem. I also make cinnamon biscuits with the same recipe and ice them with cream cheese icing.

I freeze my butter and grate it using a box grater. Saves me from using the pastry blender! 🙂

These do look delicious, but I want to mention that if you don’t have buttermilk, for any recipe calling for it, you can put 1 tablespoon vinegar or lemon into a one cup measure and then add milk to one cup and let it sit for a few minutes. Works great! I even use 1% and have had no problems!

You can actually bake the biscuits and they will still be perfect the following day. Just wrap them up good!

I just made these biscuits this morning and they are amazing! I was out of Bisquick and my homemade recipe calls for self rising flour; which I am also out of. I found this recipe through Pinterest and it was a hit with my entire family. The recipe made 16 biscuits for me. It is hard to find a good biscuit recipe but this one is a keeper.

Made these tonite….They are SOOOOO fabulous! Soft and light and buttery, the flavor is divine! They are a huge hit with the family. I do have to admit that I was too lazy to roll them out, and simply blobbed them out on the baking sheet…Even with that they came out great. THIS is the only biscuit recipe I will EVER need. I can’t wait to try it with your sausage gravy. Oh, and I know what you mean about snitching nibbles of the raw dough….It is THAT good!

Made these for my hubs this morning & they were by far the BEST biscuits I’ve ever made OR tasted! We happened to have buttermilk in the fridge, so I used that instead of milk. They baked up soooo fluffy & tender! Great buttery flavor, too. I’d never seen biscuits made with egg or cream of Tartar, so maybe that’s the secret??? I can say that I’ll probably never mess around with another biscuit recipe again though, this one is IT!

Yummy! I just whipped these up to go along with meatloaf leftovers. Everyone loved them. They were quick, easy, light and fluffy. The best comment was “THIS is why I don’t like Grands biscuits!” I put the butter in the freezer after I cut it up so that it was extra cold once I got the dry ingredients mixed up. I stirred my egg and milk together. I used salted butter and skim milk. This one is pinned on my go to recipes.

I just saw your site via Pinterest, and cannot wait to make these. I knew a sweet, elderly lady that would make homemade biscuits and homemade syrup, then she would turn the biscuit on it’s side, take a butter knife and “drill” a hole halfway through the biscuit and then pour the syrup into the hole. They were out of this world!
I definitely want to try this recipe but use buttermilk.

To duplicate buttermilk just put a little vinegar in regular milk and after a bit of time it will curdle up and be very similar to buttermilk. At least good enough for a recipe. I wouldn’t drink it though!
