I made up the most outrageous batch of muddy buddies to date, Monster S’mores Muddy Buddies, and let me tell you, they have it ALL! I jazzed up my usual recipe and used bittersweet chocolate and peanut butter for the chocolate coating. This provides such a deep dark chocolate flavor perfect for adults.

I added in some roasted almonds for a little extra protein and crunch and let’s be honest here, the one thing muddy buddies are missing is a bit of salt. The almonds solve that problem and make this snack adult-worthy. Great for teachers and moms and dads on the go!

Once the chocolate has coated the Chocolate Chex and Cocoa Puffs, and almonds, it gets thrown into a bag of powdered sugar where the magic happens. Now, I am a big fan of color and texture. I don’t like to coat EVERYTHING in chocolate and powdered sugar. I like to add some stuff at the end so you can see what you’re eating. Check this out:

These Monster S'mores Muddy Buddies are the ultimate snack mix! Filled with all sorts of goodies like roasted almonds, peanut butter, and marshmallows - this sweet treat is hard to resist!

Let’s go back for a moment. I don’t think I mentioned yet that I used THREE different types of cereal in this recipe, each one better than the last. Chocolate Chex, Cocoa Puffs, and Golden Grahams. In fact, now that I think of it, maybe this counts as breakfast???

When back to school season arrives and you find yourself not quite ready, follow these quick tips and  you’ll be right back on track:

  • Two weeks before school starts go back to school shopping for the basics: backpack, lunchbox, basic supplies. This gets you and your child in the mindset of “school is almost here!”
  • The week before school starts, remind your kids where the designated backpack drop station is. Whether it’s in their rooms, the front entry, or in the laundry room, knowing where you expect their backpacks to go can be a lifesaver. No more tripping over backpacks when you walk in the front door!
  • The week before school starts is also a great time to start stocking up on snacks. We have a snack station in our house that I use for both lunch packing, sports, and after school snack needs. It’s actually a pull-out drawer that is filled with a wide variety of food that I know they like: nuts, applesauce, fruit snacks, fruit packs, crackers, etc. I grab 2 snacks to put in their lunch every morning and it saves me time then as well as after school. A real lifesaver!
  • Don’t forget to stock up on your favorite cereals so a nutritious breakfast is right there when you need it! Kids who eat cereal are more likely to meet daily requirements for key nutrients. Eating breakfast has been shown to help with school performance in kids. At breakfast, cereal is the number one source of key vitamins and minerals like vitamin D and calcium.

Monster S’mores Muddy Buddies

Ingredients

  • 12.8 oz Chocolate Chex cereal about 8 cups, divided
  • 3 cups Cocoa Puffs divided
  • 2 cups roasted lightly salted peanuts, almonds
  • 2 cups powdered sugar
  • 10 oz bittersweet chocolate chips
  • 1/2 cup creamy peanut butter
  • 1 cup Reese’s peanut butter chips
  • 2 cups miniature marshmallows
  • 2 cups mini M&M’s
  • 2 cups Golden Grahams cereal

Instructions

  • Combine 6 cups Chex cereal, 2 cups Cocoa Puffs, and 1 cup of almonds in a very large bowl and set aside.
  • Divide powdered sugar into two large, gallon size ziploc bags and set aside.
  • Line a large baking sheet or surface with parchment paper.
  • Combine chocolate chips and peanut butter in a microwave safe container. Heat on high for 30 seconds, stir, Heat on high for another 30 seconds and stir until smooth.
  • Drizzle the melted chocolate – peanut butter mixture over the top of the Chex, Cocoa Puffs, and almonds and toss gently to combine. Make sure it is well coated.
  • Transfer half of the chocolate-coated cereal mixture into one bag with powdered sugar and half into the remaining bag.
  • Close each bag tightly and gently shake until the mixture is fully coated. Repeat with remaining bag.
  • Spread the contents of both bags onto the parchment lined surface and let set up for 15 minutes. You can refrigerate to speed up the process.
  • Sprinkle on all the remaining ingredients and toss gently to combine.
  • Store in an airtight container for up to one week.
