Lemon Rice Krispies Treats

There is something wonderfully nostalgic about Rice Krispie Treats. Not only are these treats a favorite with kids but they also are frequently one of the first recipes that young cooks learn how because they are just so easy!

I love that this recipe combines the classic flavors of a traditional rice krispie treats recipe with bright, bold lemon flavor that makes this exquisite treat perfect year round.

When in doubt, just add lemon! It makes everything more delicious… even Rice Krispie Treats!

Rice Krispie Treats Ingredients

You’ll notice all the usual rice krispie treats ingredients in this recipe plus a few extras that take these RKT over the top. Let’s take a look at what you’ll need:

5 SECRETS TO GETTING DINNER ON THE TABLE...FAST!

  • mini marshmallows – some of the marshmallows will be melted and some will be added in later
  • salted butter – if using unsalted butter, add 1/2 teaspoon of salt to the recipe (add it when you add the lemon juice)
  • lemon juice and lemon zest – about 1 lemon will give you the necessary lemon juice and zest to give this recipe amazing lemon flavor
  • honey – the honey can be replaced with maple syrup or agave syrup and is optional
  • vanilla extract – this recipe is also a good time to use up that lemon extract. Half lemon and half vanilla is a great way to go!
  • Rice Krispies cereal – you’ll need six cups of puffed rice cereal.
  • white or yellow candy melts – this is totally optional but adds a festive finish to these rice krispie treats. I used white candy melts, but yellow candy melts also goes great with this recipe.  You can use a different color here too depending on the holiday or event. White looks good, or try pink, red, or green for different holidays. 
  • shortening or oil – I like to use either coconut oil or shortening with the candy melts for a smoother consistency and to aid in the melting process.

How To Make Lemon Rice Krispies Treats

  1. Prepare a 9×13 baking pan by spraying it with cooking spray or lining it with parchment paper. Set it aside. 
  2. Melt butter over medium low heat.
  3. Measure out 1 cup of mini marshmallows and set aside. 
  4. Add the rest of the marshmallows in with the butter and stir frequently until melted.
  5. Once melted, take off heat and add in the lemon juice, honey, and vanilla extract (and/or lemon extract) and stir to combine. 
  6. Stir in remaining 1 cup of marshmallows and cereal. Once all combined, transfer it to the 9×13 inch baking pan and press down gently to create an even surface.
  7. In a microwavable bowl, microwave the candy melts and shortening or oil for 15 seconds. Remove and stir. Continue to melt in increments of 15 seconds until fully melted.
  8. Drizzle over the rice krispie treats using a fork or piping bag. Sprinkle with additional lemon zest, optional. 
  9. Let your rice krispies treats cool down in the refrigerator for 1 hour or until set. Slice and serve.

You don’t want the 1 cups of marshmallows that you added with the rice krispies cereal to melt completely. This will lead to a nice, sweet bite that adds to the gooeyness of these treats!

FAQs

How do I store these Lemon Rice Krispie Treats? Store these in an airtight container at room temperature for up to 5 days, or in the refrigerator for up to 7 days.

How do I work with candy melts? Candy melts are tricky to work with. If you are slowly heating them in the microwave in increments, stirring in between, you should be able to get a good consistency, especially if you add shortening or oil. However, a fool proof method is to use a double boiler, which means you have a little bit of water in a small saucepan that boils, with an empty metal or glass bowl on top where you will melt the candy melts using the heat from the boiling water. This method allows your candies to melt slowly and with more control. If you find that your chocolate is seizing up in the microwave, try using the double boiler method. 

Can I use a different flavor other than lemon? Yes! Orange and lime work great in this recipe as well.

To add even more lemon flavor, sprinkle additional lemon zest on top of the bars. The additional lemon zest is completely optional, but tends to add an additional kick of lemon to your treats. If you don’t want the lemony zing, use sprinkles, or stick with simply using the candy melts as decoration.

Ingredients

  • 16 ounces mini marshmallows divided
  • 6 tablespoons salted butter
  • 2 tablespoons lemon juice ~1 lemon
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract

  • Once melted, take off heat and add in the lemon juice, honey, and vanilla extract (and/or lemon extract) and stir to combine.
