Why buy store-bought when you can make these irresistible Strawberry Danishes at home? ! Light, flaky pastry topped with a lemon-scented cheese filling and sweet strawberry jam. With minimal prep and a handful of ingredients, you’ll have a tray of beautiful pastries ready in no time. Perfect for brunch, dessert or any time you crave something sweet!

Strawberry Cream Cheese Danishes

  1. Combine cream cheese, sugar, lemon zest and vanilla extract in a mixing bowl.
  2. Beat together until smooth and creamy.
  3. Cut both sheets of puff pastry lengthways into strips one inch thick.
  4. Pick a strip up with one end in each hand. Twist opposite ways then lightly coil the strip around so you have a round shape. Repeat with the remaining strips. Refrigerate for 15 minutes.
  5. Use your thumb to press a groove into the center of each pastry then prick it with a fork.
  6. Egg wash the pastry avoiding the very center.
  7. Add half a teaspoon of jam to the center of each pastry.
  8. Spoon just less than one tablespoon of the cream cheese mixture on top.
  9. Add another half teaspoon of jam on top of the cream cheese mixture. Bake in the preheated oven for 18 minutes or until the pastry has puffed up and is golden brown.

Make the Glaze, Garnish and Serve

  1. Beat the powdered sugar, milk or cream and vanilla extract together until smooth.
  2. Add the sliced strawberries to the top of each danish.

Trish’s Tips

  • It’s important to chill the pastry once it is shaped as cold pastry will perform better and puff up properly in the oven.
  • Prick the center of the pastries as this stops them from puffing up too much and pushing out the filling.
  • We tested this recipe a number of ways and discovered it was best to divide the jam. If all the jam is added on top it runs over the edges of the pastry and burns. If all of the jam is added to the bottom it can escape through any gaps. So, dividing it gave the best outcome.
  • We also tried this recipe with adding strawberries on top of the pastries and baking them. We did enjoy the taste of these pastries but presentation wise they were not the prettiest because the strawberries lost their color once baked. We also found the juice from the strawberries ran in the oven quite a bit and made the pastry a bit soggy. We found it much better to add slices of strawberry on top of the danish pastries once they were baked. This also improved the longevity of any leftover danish pastries.

Ingredients

  • 8 ounces cream cheese at room temperature
  • 3 tablespoons granulated sugar
  • lemon zest zest of one lemon
  • 1 teaspoon vanilla extract
  • 17.25 ounces puff pastry 17.25-ounce package frozen puff pastry sheets, thawed
  • 1 large egg beaten (for egg wash)
  • 16 teaspoons strawberry jam divided
  • 1 cup powdered sugar
  • 2 tablespoons milk or heavy cream
  • ½ teaspoon vanilla extract
  • 16 strawberries sliced

Instructions

  • To a large mixing bowl, add the cream cheese, sugar, lemon zest and vanilla extract. Beat until completely combined then set aside.
    8 ounces cream cheese, 3 tablespoons granulated sugar, lemon zest, 1 teaspoon vanilla extract
  • Lay out a sheet of puff pastry in front of you, gently roll it out to remove the creases. Cut the sheet lengthways into strips one inch thick. Repeat with the second sheet.
    17.25 ounces puff pastry
  • Pick a strip up with one end in each hand. Twist opposite ways to form a loose ribbon then place one end of the strip in front of you to act as the center point of the pastry and lightly coil the strip around it so you have a round shape. Repeat with the remaining strips of pastry.
  • Transfer the pastry rounds on to two baking sheets leaving a small amount of space in-between.
  • Put the baking sheets into the refrigerator for 15 minutes.
  • Preheat the oven to 400°F
  • Remove the chilled pastry from the refrigerator. Use your thumb to press a groove into the center of each pastry then prick it with a fork.
  • Egg wash the pastry avoiding the very center. Add half a teaspoon of jam to the center of each pastry.
    1 large egg, 16 teaspoons strawberry jam
  • Next, add one scant tablespoon of the cream cheese mixture on top of the jam. Add another half teaspoon of jam on top of the cream cheese mixture.
  • Bake in the preheated oven for 18 minutes or until the pastry has puffed up and is golden brown then remove from the oven.

Glaze

  • In a large mixing bowl, add the powdered sugar, milk or cream and vanilla extract. Beat until completely smooth. The glaze should be runny enough to pour. If it is too thick add a little more milk or cream, if it’s too thin add a little more powdered sugar.
    1 cup powdered sugar, 2 tablespoons milk or heavy cream, ½ teaspoon vanilla extract
  • Add the sliced strawberries to the top of each danish pastry.

  • Pour the glaze over the top. Serve and enjoy!
