There’s nothing better than a fresh salad during the summer, am I right? On hot summer days, a cool, refreshing salad is what I crave the most. They seem to go with everything whether you’re having burgers and hot dogs for dinner or t-bone steaks. This salad is truly something special and is a sweet addition to any meal. It’s made with carrots, crushed pineapple, Greek yogurt, raisins and pecans.

I was at the store this past week and saw these gorgeous bunches of organic carrots and I couldn’t resist picking them up. We have carrots growing in our garden right now but they are just babies.

The purple and yellow carrots are just too pretty for words! I was inspired to make this carrot salad, a recipe we have been enjoying for years, in a more “rainbow” fashion. Using multiple color of carrots, as well as golden and regular raisins, makes this salad something special. But please don’t hesitate to make the salad with regular orange carrots and raisins- it’s still a show stopper.

If you cringed at the thought of pineapple and carrots together – you’re gonna wanna rethink your stance on that. I think I’ve proven that carrots and pineapple go very well together, right? If you haven’t tried my Nana’s To Die For Carrot Cake, that really needs to happen ASAP. This salad has a lot of the same elements as the carrot cake but is so good for you!

I didn’t add any additional sugar to the salad because my carrots were plenty sweet and those, along with the crushed pineapple, made this salad perfectly refreshing with just the right amount of sweetness. If you taste your salad after assembling it and it needs a little more sweetness, add sugar a teaspoon at a time.

Any nuts will work here but I love using toasted pecans. They add a beautiful crunch and nutty flavor to the salad.

I love how insanely easy this salad is to throw together and it’s ready to go right then. If you don’t need it right away, refrigerate up until you do and it will be chilled and perfect – ready to cool you off!

Ingredients

  • 1 cup crushed pineapple do not drain
  • 1/4 cup plain Greek yogurt
  • 1/4 tsp salt
  • 2/3 cup raisins I use half golden, half regular
  • 4 cups grated carrots
  • 3/4 cup chopped toasted pecans

Instructions

  • Combine crushed pineapple, Greek yogurt and salt in a medium bowl. Stir until completely combined.
  • Add in the remaining ingredients and stir again.
  • Refrigerate until needed.

    You’ve definitely got grated beetroot in that salad, according to the photos, but yet the only grated item shown in the written recipe are the carrots. Can you please clarify this? Thanks,

    I was very disappointed with this salad. My guest did not like it. The Greek yoghurt it contains makes it sour. Unfortunately, I throw it in the trash.
    I certainly will not do this recipe again.

    What a beautiful summer salad! I love that you used the rainbow carrots–those are my favorite. I make a shredded carrot salad with raisins and walnuts but I have to give your version a try!

    What a great, simple salad. The use of pecans reminds me I am suppose to whip up a batch of spiced pecans for my sister 🙂 They are definitely a favourite around here.
