Slow Cooker Kielbasa and Barbecue Beans

Every Sunday, without fail, Chris asks me to make crockpot chili. He loves being able to watch football and grab a bowl of chili and eat it whenever he likes. My boys are big on chili too. They like me to warm up flour tortillas, spread the insides with melted butter and then roll them up. They dip that into their chili. Try it – it’s pretty spectacular!

As much as I love chili, I get a little tired of making it. So last week, our Sunday chili turned into this Slow Cooker Kielbasa with Barbecue Beans. It has all the components of chili that they love, but with a lot more flavor.

I used three different beans, maple syrup, molasses, and a bunch of other ingredients that you likely have in your pantry for the base. In a moment of weakness, I opted to add in bacon, because, well…bacon.

My favorite part of this dish is the kielbasa. I love kielbasa and I like to keep it on hand for quick breakfast scrambles or easy dinners like this Kielbasa, Peppers, and Potato Hash or this Cheesy Kielbasa, Rice and Broccoli Skillet. I added two full ropes of kielbasa cut into chunks to the top of the rest of the ingredients and let me slow cooker do the work for me.

The kielbasa slowly cooks on top and the juices run down into the bean mixture below. Magical. When all is said and done, you’ve got something that looks like this:

Ingredients

  • 2 15 oz black beans canned, drained and rinsed
  • 2 15.8 oz Great Northern beans canned, drained and rinsed
  • 1 15.25 oz can kidney beans canned, drained and rinsed
  • 1 onion diced
  • 1/2 cup barbecue sauce
  • 3/4 cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tbsp mustard
  • 1 tsp chili powder
  • 1 tbsp apple cider vinegar
  • 1/2 cup maple syrup
  • 1/4 cup molasses
  • 14.5 oz chicken broth
  • 1/2 lb bacon cooked, cut into bite size pieces
  • 2 lbs Kielbasa cut into bite size pieces

Instructions

  • In a large slow cooker, add all of the ingredients except for the kielbasa and stir gently to combine.
  • Place the kielbasa on top and cover with the lid.
  • Cook on low for 6 to 8 hours or high for 4 to 5 hours. Stir in the kielbasa before serving.

Notes

I recommend the low setting for this recipe because on high, the beans tend to get dried out. If you need to cook on high due to time constraints, monitor the beans and add more broth or water if necessary.

    Shoot! I used dry norther beans. After 6 hours they’re still hard as rocks. Can this be salvaged?

      Oh no! Yeah, that won’t work. You would need to soak AND cook the beans before using in this recipe. 🙁

        I have used dry beans unsoaked in the slow cooker before… but I think I did garbanzo. It took about 8-10 hours. I heard that some beans need to be boiled on the stove because the slow cooker doesn’t get hot enough.

          This would be a completely different recipe using dry beans. They would definitely need to be soaked and/or the amount of liquid greatly increased. I actually have a slow cooker refried beans recipe on my site (https://www.momontimeout.com/slow-cooker-refried-beans/) that doesn’t require the presoaking of beans.

    This is a good recipe. My family doesn’t like sweet dishes, so I only put one tablespoon of brown sugar in this. Brown sugar is usually in BBQ sauces. I also added three chopped up raw chicken breasts. And only one kielbasa sausage. Only one can each of the beans. And about one half cup of the chicken broth. Omitted the bacon. My family loved this recipe. Thank you !!

    Do you use Light or Dark Kidney beans? How much is one serving or total yield? Going to make this for Super Bowl and want to make sure it will be enough or if I need to double the recipe. Sounds and looks yummy. Can’t wait to make it! 🙂

      No, not as long as you are using a smaller slow cooker Jennifer. Everything is going in already cooked, so it’s really a matter of heating it up together and letting the flavors meld. Enjoy!

    Like the kielbasa and beans but would have preferred a recipe using dry beans.

      Why not just soak those beans (same ones in recipe), cook, and then follow the rest of the recipe! 🙂
