Summer is here and the boys and I are gradually adjusting to our new schedule. This past week was interesting…to say the least. The boys seem to think that since there is no school, that I’m going to make them a “weekend” breakfast every morning.
Not so my friends.
This mama has other things to do.
Something else…their schedules are totally off. Nine o’clock rolls around and these kids are asking for popsicles.
Popsicles!! At 9 a.m.!

I decided to kill two birds with one stone. Blueberry Breakfast Parfait Pops. Popsicles for breakfast. Yep. That’s how I roll.
See, these popsicles aren’t just any old popsicles. They’re made with Nature Valley Breakfast Biscuits (blueberry is my fave) and Yoplait Greek yogurt so they’re just packed with protein and other awesomeness for a great start to my morning. Oh yeah. And the kids.
Of course, my kids think I’m crazy cool that I’m allowing popsicles for breakfast and I KNOW I’m crazy cool because all of us are getting a great, nutritious start to our day.

Done and done.

These parfait pops also make a killer afternoon snack. Especially when it’s 107 degrees.

Starting my day off with happy kids, zero arguing, and no cooking is a win-win for everybody :) Now if I could just serve popsicles for dinner…

What, no credit? These look even better than I pictured when we were talking about them. Not all yogurts freeze well, but it looks like this does. Good job!
I just want to sink my teeth into those ridges! They’re just the most perfect popsicles and not a drop of meltiness – amazing :) pinned

Wow, are these not the coolest nibbles around!!! Thanks so much for sharing at WONDERFULLY CREATIVE WEDNESDAYS TRISH!
Wow… I want one! Have to give these a try for the grand kids. Boy, I remember back in the day when mom would freeze kool-aid in some container and just stick popsicle sticks in (which never seemed to stand up straight!)..thing was, after you suck out the kool aid..it was a big ice cube! Then with my kids, I used the little popsicle molds and used orange juice with pulp in it (or any juice with pulp) and the ice cube thing didn’t happen. But boy now a days….these are pretty cool! found you on wonderfully creative linky!
Love this idea and so simple!
Sooo easy and fun too!

I am so gonna try this! This is awesome! My kids will love getting a popsicle for breakfast! And it’s super healthy! I am in awe of your greatness! Lol!
LOL! Thanks Holly!
Such a fun idea! Mine are in the freezer as we speak. One question…where did you get your cute popcicle molds?
Just popped mine into the freezer for breakfast tomorrow–my kiddo is stoked! Question: How did you manage to keep your colors separate? The different colors got stuck along the side of the molds, so I basically have the light purple color throughout (which of course is no biggie lol), any tips? I had leftover ingredients after I made my 4, contemplated making more pops, but selfishly decided to throw it all in a bowl and have “dessert” ;)
Any idea how long these will freeze for? And are those bars crunchy or more soft? School is starting soon, and I’m baking and putting things up in the freezer for quick prep in the mornings to eat on the bus!
After they’re frozen you can wrap in plastic or put in a freezer bag and they’ll stay good for a couple months. And they’re frozen so they’re pretty hard :) Enjoy!
Thanks for the tip! Lol, I meant the breakfast bars- before frozen- are they a soft breakfast bar or one of the crunchy ones? We don’t have any of these specific ones, but have several other varieties. :)
