Mint Chocolate Bark

We’re just about a few days away from St. Patrick’s Day and this Mint Chocolate Bark is the perfect way to celebrate!

I’m a huge fan of St. Patrick’s Day and love to bombard my family with all kinds of green treats. Since mint is so amazing with chocolate, this bark is a total no brainer for Christmas too!

You’ll notice the slight hint of green in this bark and that’s due to a few drops of food coloring but it’s totally optional. You can leave out the food color and go for a creamy white layer instead. It’s totally up to you!

What You’ll Need

  • Some type of chocolate and mint cookie. If you can’t find any of these, you can absolutely sub in the original OREOs. These cookies are all roughly the same size and are interchangeable in this recipe:
    • Keebler Grasshopper Cookies
    • Thin Mint Cookies (Girl Scouts)
    • OREO Chocolate and Mint Cookies
  • coconut oil or vegetable oil
  • white chocolate chips
  • mint extract
  • Andes Creme De Menthe thins – you will need 28 mints total, the exact amount that comes in the 4.67 oz box
  • green gel food coloring optional

It’s SO Easy To Make!

This delicious candy recipe takes just minutes to make and it couldn’t be easier!

  • Place the cookies in an 8 inch square pan.
  • Combine oil and white chocolate chips and melt.
  • Stir in mint extract and two drops of green food coloring to get the chocolate a nice green color.
  • Pour mixture over the cookies and set aside.
  • Mix together oil and Andes mints (setting aside 4 mints) and melt in either a double boiler or in the microwave.

  • Drizzle mixture over the top of the melted white (now green) chocolate.
  • Drag a knife through the top of the chocolate to create swirls or a marbled pattern.
  • Roughly chop reserved mints and four cookies and sprinkle evenly over the top of the chocolate mixture.

  • Place in the refrigerator for two hours or until completely set.
  • Once set, remove chocolate from package and cut or break into smaller pieces.
  • Store in an airtight container for up to 1 week.

Ingredients

  • 10 oz package Fudge mint cookies
  • 2 tbsp coconut or vegetable oil divided
  • 11 oz white chocolate chips
  • ½ tsp mint extract
  • 4.67 oz Andes mints divided (set aside 4 mints)
  • green food coloring optional

Instructions

  • In a parchment lined 8x8 pan, lay in a single layer 16 fudge mint cookies. They should fit into the pan perfectly. Set aside.
  • In a small bowl, add 1 Tbs coconut oil to white chocolate chips and melt over either a double boiler or in the microwave.
  • Once melted, stir in mint extract and two drops of green food coloring to get the chocolate a nice green color. Pour mixture over fudge mint cookies and set aside.
  • In a separate bowl, mix together 1 Tbs oil and andes mints (setting aside 4 mints) and melt in either a double boiler or in the microwave. Once melted, pour mint chocolate mixture over the top of the melted white chocolate.
  • Using a knife or spatula, mix the two together to form a marbled pattern.
  • Take reserved mints and 4 fudge mint cookies and roughly chop them. Sprinkle evenly over the top of the chocolate mixture.
  • Place in the refrigerator for two hours or until completely set. Once set, remove chocolate from package and cut or break into smaller pieces.
  • Store in an airtight container for up to 1 week.

Notes

If melting chocolate in microwave, heat at 50% power and stir at 30 second intervals.
