- Combine spinach, ricotta, egg, Italian seasoning, basil, oregano, garlic powder, salt and pepper together in a bowl and mix to combine.
- Add the Parmesan cheese and ¼ cup of the mozzarella cheese.
- Mix until well combined.
- Boil the lasagna noodles until al dente, drain the water and rinse the noodles in cold water.
- Spread 1 1/2 cups of the marinara sauce on the bottom of a baking dish.
- Spread filling on noodles and roll each into a spiral.
- Transfer the roll ups into the baking dish
- Top with the remaining sauce and mozzarella cheese.
- Cover and bake for 40 minutes at 375°F. Remove the foil and bake an additional 5-10 minutes.

- 1 pound lean ground beef ground turkey or Italian sausage, optional
- 10 ounces frozen spinach thawed and drained well
- 15 ounces ricotta cheese
- 1 large egg
- 1 tablespoon Italian seasoning
- 2 teaspoons dried basil
- ½ teaspoon oregano
- ½ teaspoon garlic powder
- ½ teaspoon fine sea salt
- ¼ teaspoon freshly ground black pepper
- ¼ cup Parmesan cheese grated fresh
- ¾ cup mozzarella cheese grated fresh, divided
- 2 ½ cups marinara sauce divided
Garnish
- fresh parsley chopped for garnish

- Preheat the oven to 375°F and spray a 9×13 baking dish with nonstick cooking spray. Set aside.
- Bring a salted pot of water to a boil. Boil the lasagna noodles until al dente. Once the noodles are cooked, drain the water and rinse the noodles gently in cold water. Blot dry with paper towels.12 lasagna noodles
