Today I’ve got some drool-worthy bars for you! These Coconut Toffee Chocolate Chip Cookie Bars are bound to be a new favorite.

Everyone loves a good cookie bar, right? Magic bars are definitely my guilty pleasure – all that yumminess packed into one sweet little package – how could I possibly resist? Today I’ve got a great twist on a magic bar that uses two of my favorite ingredients – coconut and toffee! Sooo yummy people!

What You’ll Need

CRUST:

  • all-purpose flour
  • old-fashioned oats
  • flaked coconut
  • salt
  • brown sugar
  • butter
  • egg
  • semi-sweet chocolate chips

FILLING:

  • sweetened condensed milk
  • light corn syrup
  • toffee bits

How To Make These Cookie Bars

The base of the bar, as well as the topping, is a delicious chocolate chip oatmeal cookie. Not a bad way to start and finish am I right? The center is ooey-gooey sweetened condensed milk and corn syrup topped with an entire bag of Heath Milk Chocolate Toffee bits. Yeah. I know.

5 SECRETS TO GETTING DINNER ON THE TABLE...FAST!

Incredible.

PREPARE CRUST:

  1. Combine flour, oats, coconut, and brown sugar in a large bowl.
  2. Add butter and continue mixing until a crumbly dough forms.
  3. Add egg and continue mixing well. Stir in chocolate chips.
  4. Reserve 1-1/2 cups of dough for topping. Press remaining dough into bottom of a lightly greased 13 x 9-inch baking dish.
  5. Bake 10 minutes.

PREPARE FILLING:

  1. Combine sweetened condensed milk and corn syrup in a small bowl and mix until combined.
  2. Pour evenly over hot crust. Sprinkle with toffee bits. Top evenly with reserved crust mixture.
  3. Bake 25 to 30 minutes until golden brown. Cool and cut into bars.

These Coconut Toffee Chocolate Chip Cookie Bars would be something that I would see at a bake sale and snatch up in a heartbeat.

I cannot recommend these bars enough! They are absolutely fantastic and so easy to make! I’ve yet to find anyone who doesn’t think they are amazing. Enjoy!

Ingredients

CRUST:

  • 1 1/4 cups all-purpose flour
  • 1 cup old-fashioned oats
  • 2 cups flaked coconut
  • 1/2 tsp salt
  • 3/4 cup brown sugar
  • 1 cup butter softened
  • 1 egg lightly beaten
  • 12 oz semi-sweet chocolate chips

FILLING:

  • 14 oz sweetened condensed milk
  • 1/4 cup Karo® Light Corn Syrup
  • 8 oz toffee bits

Instructions

  • Preheat oven to 350°F.

CRUST:

  • Combine flour, oats, coconut, and brown sugar in a large bowl of electric mixer and mix at low speed.
  • Add butter and continue mixing until a crumbly dough forms. Add egg and continue mixing well. Stir in chocolate chips.
  • Reserve 1-1/2 cups of dough for topping. Press remaining dough into bottom of a lightly greased 13 x 9-inch baking dish.
  • Bake 10 minutes.

FILLING:

    Trish, I had a had time getting the top layer spread out on top of the center…. What am I doing wrong? The center came to the outside of the bar while baking also.

      Hi Karen! You don’t need to spread out the top layer of the dough. Just drop teaspoonfuls of the crust mixture on the top and it should spread out on it’s own. It’s okay of a little of the center comes to the top in some places but it shouldn’t “rise” to the top for sure. Hope that helps!

    My mouth is watering just looking at the pictures of these bars. My hubby likes to take Dippers or Nature Valley bars in his lunch so something like this is great. Any way of putting the nutritional value, especially the calories along with your recipes when you post them. Can’t wait to try this one out.

      There are recipe calculators here online – if you use myfitnesspal.com they have one on their site, too. Pretty easy to just put all the ingredients in, decide how many servings you’re making your bar size and it will automatically tell you how many calories & the nutritional content per serving! 🙂
