Today I’ve got some drool-worthy bars for you! These Coconut Toffee Chocolate Chip Cookie Bars are bound to be a new favorite.

Everyone loves a good cookie bar, right? Magic bars are definitely my guilty pleasure – all that yumminess packed into one sweet little package – how could I possibly resist? Today I’ve got a great twist on a magic bar that uses two of my favorite ingredients – coconut and toffee! Sooo yummy people!

What You’ll Need

CRUST:

  • all-purpose flour
  • old-fashioned oats
  • flaked coconut
  • salt
  • brown sugar
  • butter
  • egg
  • semi-sweet chocolate chips

FILLING:

  • sweetened condensed milk
  • light corn syrup
  • toffee bits

How To Make These Cookie Bars

The base of the bar, as well as the topping, is a delicious chocolate chip oatmeal cookie. Not a bad way to start and finish am I right? The center is ooey-gooey sweetened condensed milk and corn syrup topped with an entire bag of Heath Milk Chocolate Toffee bits. Yeah. I know.

5 SECRETS TO GETTING DINNER ON THE TABLE...FAST!

Incredible.

PREPARE CRUST:

  1. Combine flour, oats, coconut, and brown sugar in a large bowl.
  2. Add butter and continue mixing until a crumbly dough forms.
  3. Add egg and continue mixing well. Stir in chocolate chips.
  4. Reserve 1-1/2 cups of dough for topping. Press remaining dough into bottom of a lightly greased 13 x 9-inch baking dish.
  5. Bake 10 minutes.

PREPARE FILLING:

  1. Combine sweetened condensed milk and corn syrup in a small bowl and mix until combined.
  2. Pour evenly over hot crust. Sprinkle with toffee bits. Top evenly with reserved crust mixture.
  3. Bake 25 to 30 minutes until golden brown. Cool and cut into bars.

These Coconut Toffee Chocolate Chip Cookie Bars would be something that I would see at a bake sale and snatch up in a heartbeat.

I cannot recommend these bars enough! They are absolutely fantastic and so easy to make! I’ve yet to find anyone who doesn’t think they are amazing. Enjoy!

Ingredients

CRUST:

  • 1 1/4 cups all-purpose flour
  • 1 cup old-fashioned oats
  • 2 cups flaked coconut
  • 1/2 tsp salt
  • 3/4 cup brown sugar
  • 1 cup butter softened
  • 1 egg lightly beaten
  • 12 oz semi-sweet chocolate chips

FILLING:

  • 14 oz sweetened condensed milk
  • 1/4 cup Karo® Light Corn Syrup
  • 8 oz toffee bits

Instructions

  • Preheat oven to 350°F.

CRUST:

  • Combine flour, oats, coconut, and brown sugar in a large bowl of electric mixer and mix at low speed.
  • Add butter and continue mixing until a crumbly dough forms. Add egg and continue mixing well. Stir in chocolate chips.
  • Reserve 1-1/2 cups of dough for topping. Press remaining dough into bottom of a lightly greased 13 x 9-inch baking dish.
  • Bake 10 minutes.

FILLING:

    My whole family huddled around the mixer for this one! They kept sneaking bits of the dough and watched in awe as the sauce was poured over this gooey goodness! And now we all watch with our noses pressed against the glass oven window for this to be pulled and cooled and drooled over. Thank you so much! I honestly wasn’t sure on the coconut 🥥 and the sauce but it’s works…

      It is sweetened in this recipe but you could use unsweetened if you prefer.

    These look like they might not hold their shape well and might be actually soft. Am I correct, or do they stay in a nice shape that will look good and travel well? I am looking for ideas for Christmas trays and those squares that are delicious but do not keep their shape are better left for another time.

    They’re in the oven now. I used dark chocolate chips instead of semi. The mixture is far from ‘crumbly’ as you describe it, but it sure tasted good when I tried it! LOL You can’t really ‘sprinkle’ the mixture on the top because it’s too wet – I did put blobs as close together as possible. I kept going back and watching your video and telling myself ‘no, it’s not crumbly. No you can’t sprinkle it. Just do it the best you can, Sue!’ LOL I’ve baked for my entire life (I’m old) – this mixture is so wet, but I followed directions & it looks like yours so…..we’ll see 🙂 I just LOVE LOVE LOVE coconut!

    Is the corn syrup necessary or is there a substitute? My husband has a severe corn allergy.

    Hi Trish, You have amazing recipes on here, thank you for sharing them. I was looking around and found a link (what I thought was titled Peanut Butter Protein Balls). And when I tried to go back and find it I couldn’t, and nothing came up when I searched. Do you have a recipe like this? (didn’t know if it was a link to another site) If you do have one would you please help me find it? Thank you so much. I have saved many of your recipes to make later. We have 1 vegan and 2 vegetarians in our house, so I am always looking for new recipes, especially ones that contain protein. Thank you.
