The BEST Fluffy Buttermilk Pancakes you’ll ever try – promise! This easy to follow pancake recipe yields super delicious and totally amazing pancakes every time! So much better than a box mix! All you need is to top them with maple syrup and you’re good to go. Make sure you whip up a batch of baked bacon (check out my how to bake bacon guide here) to serve alongside these delicious buttermilk pancakes!

Buttermilk Pancakes

I take my breakfast seriously. Like, very seriously. Breakfast is my favorite meal of the day, with dessert, obvi, coming in a close second. If you asked my family what my “specialty” was in the kitchen, it would be breakfast, for sure.

I love it all: waffles, french toast, casseroles, sausage gravy, biscuits, eggs anyway I can get ’em, muffins, and pancakes, glorious pancakes. Man do I love pancakes. My Nana had the most amazing pancake recipe and then she’d make her own maple syrup and it was poured, piping hot, on top of a hunk of butter and the fluffiest buttermilk pancakes and my life was complete.

The Secret to the BEST Pancakes

The secret ingredient to pancakes is buttermilk. I’ve had millions of pancakes in my time and tried many pancake recipes. Thee very best of those were made with buttermilk. There is the trick of adding vinegar to milk to make your own buttermilk and while this is an adequate substitute, I think the real thing is better for sure. But honestly, use what you have on hand. I use buttermilk for a lot of recipes like Buttermilk Ranch Oven Fried Chicken and Chicken Fried Steak.

With Mother’s Day on the horizon, I wanted to make sure were equipped with the BEST fluffy buttermilk pancakes recipe out there…this one. I mean, just look at them!

Tips for Making the Best Pancakes

  • I like to use a griddle when making pancakes. It’s much more efficient and an easier way to feed the masses, i.e, my growing boys.
  • Don’t over mix the pancake batter. Small lumps are perfectly acceptable!
  • Give your batter a little time to rest after mixing it together. I use this time to preheat the griddle, set out plates, get my syrup warming, etc.
  • Serve your syrup warm, if not hot. It helps the butter melt and spreads all that awesomeness all over the place.

I don’t know about you, but I think breakfast for dinner should be a weekly occurrence with these pancakes as the star of the show.

The BEST Fluffy Buttermilk Pancakes you'll ever try! This easy to follow pancake recipe yields super delicious and totally amazing pancakes every time!

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 tablespoons granulated sugar
  • 2 cups buttermilk
  • 2 large eggs lightly beaten
  • 1 teaspoon vanilla extract optional

Instructions

  • Whisk together the dry ingredients in a large bowl or, as I frequently do, a large glass measuring cup.
  • Whisk in the buttermilk, eggs and vanilla extract just until combined. Some small lumps are okay.
  • Let pancake batter rest for 10 minutes.
  • Heat a large skillet or griddle over medium heat.
  • Spray with non-stick cooking spray OR brush with butter or oil.
  • Ladle 1/3 - 1/2 cup batter onto the griddle for each pancake.
  • Flip the pancakes over when small bubbles appear on the surface and continue cooking on the opposite side until golden brown.
  • Serve with butter and syrup.

    This is the Best pancake recipe ever! No more flat pancakes here! These are fluffy & taste great. We served with maple syrup, chopped up strawberries & sprinkled a little powdered sugar. Perfect! Thank you for sharing!

    Today I made your fluffy buttermilk pancakes. My 68 yo husband looked up and said, “these are the best pancakes I’ve ever tasted”. My 17 yo grandson agreed and said, “like soft pillows in your mouth”. I’m so happy I found your recipe as I’ve never found “the one” for pancakes until now.

    Absolutely perfect pancakes, the only ones I’ll make. Super simple recipe too – can whip this up in 2 minutes.

    If you are at altitude, I highly recommend halving the baking soda and baking powder measurements. My pancakes were rising way too much before I did this and not even cooking in the middle. Now they look like the picture, perfect with the right amount of fluff.

    These pancakes really ARE the best! They turned out exactly like the photo. Thick and fluffy and I made them exactly as the recipe stated. This will be my new go-to recipe for pancakes. So delicious!

    I’ve made these at least a dozen times. Plain, with blueberries, chocolate chips, topped with fruit. They are a perfect pancake!

    Oh my gosh this recipe is the best! I’ve always struggled with from-scratch pancakes as they are usually so dense but these are so fluffy and delicious. Love it. Thank you!

    Thank you, Trish! Reduced fat buttermilk is only in our house once a year to make Irish Soda Bread. ☘️ There’s usually a cup leftover that usually gets tossed. Not anymore! In fact buttermilk, will be bought 12-fold or more a year from now on. I halved the recipe and threw in our staple of blueberries. Oh my! In pancake heaven and looking forward to enjoying more weekend breakfasts with my son and hubby. Half a recipe was plenty for the two guys and me.

    Thank you, Trish! Buttermilk is in our house only once a year. So every year after making the annual recipe for Irish Soda bread with reduced fat buttermilk, I always have a cup of buttermilk leftover and it usually gets tossed. But not anymore! The dairy farmers will be happy to know that buttermilk might just have to be bought by my house hubby 12-fold or more a year! We are in pancake heaven at the moment and look forward to having that buttermilk in the house more frequently for this amazingly tasty treat!??

    These pancakes are so Good. I have made them twice now for my husband and me so I cut the recipe in half. Next weekend when the Grandkids spend the night I am making these and I’m betting they will love them.

    Definitely the best pancake recipe I’ve found. Been making these for a while now.
    I will say, real buttermilk is a necessity here. While the milk/vinegar substitute will work, I’m not sure I’d call it “adequate”.

    Didn’t really want to make pancakes this morning but a friend gave us some real Canadian maple syrup and my family wanted pancakes. (I don’t like to make them because they never turn out as good as they are in my mind!) Holy cow! They are so wonderful even my 6 year old granddaughter who has NEVER liked pancakes gladly ate these! We all LOVED them and the recipe is so easy!
