I have been on such a chocolate-cherry kick recently and the boys have been craving brownies. As I sit here writing this, I can hear them in the kitchen sneaking more of these brownies…boys!

I can’t even begin to blame them as these brownies are now my favorite thing EVER.

One of my favorite tricks for brownies is to add mini chocolate chips to the batter. I think it adds such intense chocolate flavor and if you eat the brownies warm (highly recommended), you get little pockets of melted chocolate everywhere. Always a good thing.

These brownies don’t require a mixer meaning less dishes to wash. That alone equals a successful recipe in my book.  If you’re looking for the perfect fudgy brownies, packed full of intense chocolate flavor, this is the brownie for you.

Triple Chocolate Cherry Brownies

Serves: 16 brownies
Ingredients
  • 6 oz bittersweet chocolate chips (about 1 cup)
  • ½ cup unsalted Challenge butter
  • 2 eggs, room temperature
  • ¾ cup sugar
  • ¼ tsp salt
  • 2 tsp vanilla extract
  • ⅔ cup all purpose flour
  • 4 oz white chocolate chips (about ⅔ cup)
  • ½ cup mini semi-sweet chocolate chips
  • 10 oz jar maraschino cherries, drained, halved, and patted dry
Instructions
  1. Preheat oven to 325F.
  2. Spray an 8x8 or 9x9 pan with cooking spray and line with parchment paper. Let paper extend over two sides for easy removal of brownies.
  3. Melt bittersweet chocolate and butter together in a microwave safe container. Heat on high for 30 second, stir. Repeat. Let sit for a few minutes and stir again. Chocolate should be smooth and completely melted. If not, heat on 50% power for in 15 second intervals until melted.
  4. Beat eggs and sugar together in a medium bowl with a fork.
  5. Mix in salt and vanilla extract. Stir in melted chocolate mixture.
  6. Stir in flour just until combined.
  7. Stir in white chocolate chips, mini chocolate chips, and cherries.
  8. Pour into prepared pan and smooth top.
  9. Bake for 25-30 minutes or until center has set.

  10. The brownies failed miserably!
    Dont know why… I spent a lot $$$ on ingredients and a lot of time was put into this dessert.
    the “batter” was greasy, so much so that it simply wouldnt bake. At all. It was goopy in the middle, even after baking for an hour and a half, while experimenting with higher temperatures.
    I carefully re-checked all the ingredients against the recipe and my mom also went thru it with me. All ingredients were accurately measured and all were included.
    I made it for a dinner party and had to resort to boxed brownies because this recipe just would not bake!
    I still have the slop in the fridge, just cant give up on making it into SOMETHING….
    anyway to fix this, by chance?
    They look so good.
    And I am so very disappointed.

    • I honestly don’t know where it went wrong for you :( This is a pretty basic brownie recipe that I’ve made dozens of times without issue. Did you drain the cherries? That’s the only variable that I could think that would make them “goopy”, extra liquid from the cherries not being drained properly. They should also be patted dry per the instructions. Hope that helps!

  11. I, too, had issues with this recipe. I baked them for well over an hour and increased the temp to 350°. They were still not completely done, gooey yet crumbling at the same time. I was surprised that the recipe did not call for baking soda or baking powder, which is unusual. Was it left off? That might explain it.
