Sometimes I really, REALLY want a cinnamon roll.  I mean honestly – is there anything better than a hot cinnamon roll dripping with icing?  No my friends.  There is not.

Of course, other times I’m craving that warm cinnamony taste without the jaw-locking sweetness of a cinnamon roll and that is when my Cinnamon Swirl Bread fits the bill perfectly.  Delicious cinnamon flavor with a fragrance that permeates the entire house and systematically makes every. single. person. HAPPY.  That’s the power of cinnamon.  Oh yeah, and a little bit of sugar too, of course ;)

This bread is simply divine fresh from the oven.  And if you can’t get through a whole loaf in one sitting – try it toasted with a little butter the next day and then use the rest for french toast this weekend.

Well…

You may need to make two loaves to get it to last that long.  I did :)

I find bread-making to be such a peaceful and rewarding endeavor.  A little bit of work followed with some rise time.  A little more work and then a little more rising.  Throw it in the oven and enjoy the glorious fragrance and then it’s time to eat!  Cinnamon Swirl Bread is made much like a giant cinnamon roll.  Make up the dough and let it rise the first time.  Roll it out and slather on a wee bit of butter and some cinnamon and sugar.

Next roll it up just like you’re making cinnamon rolls but instead of cutting the roll into slices, you just slip it into a loaf pan – easy peasy!

Simply Divine Cinnamon Swirl Bread

Simply Divine Cinnamon Swirl Bread

Ingredients

  • 3/4 cup warm water
  • 2 1/4 tsp {one packet} active dry yeast
  • 1/2 cup milk, warmed
  • 1/3 cups sugar
  • 3 Tbls butter, melted
  • 1 egg, room temperature
  • 4 - 4 1/2 cups all purpose flour
  • 1 1/4 tsp cinnamon
  • 1 tsp salt
  • Filling:
  • 1 Tbls butter, melted
  • 1/4 cup sugar
  • 1 Tbls cinnamon

Instructions

  1. Place water in mixing bowl and sprinkle yeast over the top. Let stand until yeast starts to foam - about five minutes.
  2. Beat in milk, sugar, butter, and egg.
  3. Beat in 2 cups of flour until mixture is nice and smooth.
  4. Continue adding remaining flour, salt, and cinnamon a little at a time, mixing until dough is nice and smooth.
  5. Switch to a dough hook and continue mixing for another five minutes OR simply knead by hand for five minutes.
  6. Shape dough into a smooth ball and place in a lightly butter bowl. Cover and let rise for 2 hours or until doubled in size.
  7. Punch dough down and knead a few times on a lightly floured cutting board.
  8. Roll dough out to a 9 x 15 inch rectangle. {Narrow end should be as wide as your loaf pan.}
  9. Spread with melted butter and sprinkle combined sugar and cinnamon over the butter.
  10. Start with the narrow end and roll up tightly. Pinch edges well to seal.
  11. Tuck ends under slightly and place in buttered 9 x 5 x 3 inch loaf pan.
  12. Cover and let rise for another hour.
  13. Preheat oven to 350. Bake for 30 minutes or until loaf is golden brown and sounds hollow when tapped.
