Rainbow Jello Cubes are wonderfully easy and delicious and perfect for St. Patrick’s Day or any day you want to bring a smile to someone’s face!

This easy treat is great for parties and crowds. This simple recipe makes a ton of rainbow jello that you can cut into cubes or other shapes if you prefer. Enjoy!

Rainbow Jello

If you’ve ever wondered how to make rainbow jello – you’re in the right place. It’s much easier than you might think and the only hard part is the waiting for each layer to set up.

They layers are absolutely magical and as wonderful as they are to look at, they’re even more fun to eat.

You can pick the colors and flavors you would like to use to make your rainbow jello. I went with red, orange, green and blue for this batch. Feel free to make as few or many layers as you like.

This particular recipe just happens to work for St. Patrick’s Day! It’s so fun to make and easy too! The boys love picking out their favorite flavors of jello and then I put it all together. I say jello “flavors” but really they go by color. You know…”the red jello” or “the green jello”. Whatever works ?

Not only is this dessert beautiful and super-impressive {it looks like it’s really hard to make} but it’s easy on the wallet as well.

You only need some jello, a can of sweetened condensed milk, and some unflavored gelatin. Easy peasy! You can choose whatever colors you like which makes this a very versatile dessert. Layer in the colors of your next party and you’re going to have a yummy treat that’s sure to be a hit!

There’s just something about rainbow jello that bring a smile to my face every time. My boys are also thrilled when I “make rainbows” in the kitchen – they are also HUGE jello fans so this treat is a win-win for everyone.

You can really cut down the calories and sugar in this dessert by using sugar-free jello and low-fat or fat-free sweetened condensed milk. Oh and did I mention this recipe makes TONS of cubes?? Like literally, tons. Depending on how precise I am with my cutting, I usually end up with between 60-80 cubes so there’s plenty for a crowd OR class!

How To Make Rainbow Jello

Ingredients

  • 4 packages 3 ounces each assorted flavored gelatin
  • 1.5 oz unflavored gelatin divided
  • 5-3/4 cups boiling water divided
  • 14 oz sweetened condensed milk
  • 1/4 cup cold water

Instructions

  • In a small bowl, combine one package flavored gelatin and one envelope unflavored gelatin. Stir in 1 cup boiling water until dissolved. Let mixture cool slightly for 3-5 minutes.
  • Pour mixture into a 13-in. x 9-in. dish coated with cooking spray.
  • Refrigerate until set but not firm, about 20 minutes.
  • In small bowl, combine the condensed milk and 1 cup boiling water.
  • In another bowl, sprinkle two envelopes unflavored gelatin over cold water; let stand for 1 minute. Stir in 3/4 cup boiling water. Add to sweetened condensed milk mixture.
  • Spoon 1 cup of the creamy gelatin mixture over the first flavored gelatin layer. Refrigerate until set but not firm, about 25 minutes.
  • Repeat from beginning of recipe twice alternating flavored gelatin with creamy gelatin layers.
  • Make sure to let the dissolved gelatin sit for a few minutes before spooning over previous layer. This will keep the layers "pure".
  • Chill each layer until set but not firm before spooning next layer on top.
  • Make final flavored gelatin and spoon over top.
  • Refrigerate for 2 hours after finishing last layer before cutting into 1-in. squares.
  • Serve and enjoy!

    Thank you for this! My mother started making this for us back in 1966. I remember the first time she made it, she got the recipe from her best friend who got it from a magazine. We have made it for generations now. The difference is we use whole milk, instead of the canned. It’s perfect for Christmas or other holidays. Our recipe calls it 7 layer jello, or rainbow jello. I have taken it to pot lucks and it’s always one of the first dishes to go!

    I totally failed while attempting this. Not sure if there is a certain way to use gelatin to get it not to be lumpy but it totally failed for me. Not too sure if I was using the wrong stuff here in Australia? Help!

    I learned how to make this over 36 years ago but without the unflavored gelatin. You needed 2 boxes of each jello flavor and a couple more of the canned milk. You made one layer normal them in the second layer made with the boiling water but instead of the cold water you use the condensed milk. Following the same way with the 3 other flavors.

    Thank you for.helping me rediscover these amazing and beautiful treats! I have been promising my hubby for 6 years that I will make them for him. Neither my mom nor I could could find the recipe.
    My question to you is what do you do with the condensed milk and gelatin mixture while the jello layers are setting? I hate leaving it at room temperature and have never known what to do with it besides leave it out.

    I’m a bit confused. Directions say mix 2 unflavored mixed with water to the scm mixture. What do you do with the other 4 pkgs of unflavored gelatin – you only use 1 can of sweetened condensed milk so how do you make 3 batches? Am I missing something?

    I do these with sour cream and 3/4 cup of the jello so the layers are not as distinct as yours are but it works nicely too.My layers are probably a little bit thinner.My grown nephews love these at our Birthday parties. I like your version too and will be trying it as well! Always looking for ideas that are different and delicious too.
