Zuppa Toscana Soup

Many years ago, my little brother found a recipe for Zuppa Toscana soup from Olive Garden. This soup is a family favorite whenever we visit Olive Garden and is something we all look forward to. After a few tweaks I think this soup tastes just like the real thing.

My older sister sends me a box of organic produce once a month. Last week it arrived and had a gorgeous bunch of kale in it and I knew just what to make. This is the perfect meal for a cool fall or winter day – sure to warm up your belly!

Directions: 

Crumble the sausage onto a baking sheet. Bake the sausage in the oven at 300 degrees for about 30 minutes or until no longer pink. Place on paper towels to drain.

Olive Garden Zuppa Toscana Bake Sausage

Cook the bacon and crumble into small pieces.  I baked my bacon. Slice the potatoes between 1/8″ and 1/4″. I used the thick setting on my mandoline. Just make the slices about the same size so they cook evenly. Dice up the onion and mince the garlic. Throw the potatoes, onion, garlic, chicken broth, and water into a large pot on medium heat until the potatoes are cooked through.

Prepare the kale by chopping into bite sized pieces. Kale is wonderful for soups because it holds up to the heat so well. It’s also delicious! Add the sausage, bacon, red pepper flakes, and salt and pepper to taste. Simmer for another 10 minutes, stirring occasionally.

During this time the potatoes will start breaking apart into smaller bite sized pieces because they are so tender. Turn the heat to low and add in the kale and heavy cream. Let the soup heat through and serve. We like to serve this soup with some grated Parmesan cheese on top. Delicious!

  • 1 lb Italian Sausage spicy if you prefer more heat
  • 5-7 slices of bacon
  • 5 medium russet potatoes
  • 2 cups kale chopped

  • 2-3 cloves of garlic minced
  • 2 tsp red pepper flakes
  • Salt and pepper to taste

    Super yummy! Will definitely make again!
    I used grass fed stew beef, also pureed 1 1/2 cups cooked cauliflower with broth from soup, along with some milk & cream. Also baked cut potatoes with olive oil & seasoning prior to brown them prior to adding to soup.

    My husband and I live in Australia where he is from but I am american and love to stay true to all that delicious food that we have in America. I am currently 3 and a half months pregnant and have been CRAVING Olive Garden. I made this soup tonight to surprise my hubby as he loves it too and oh. my. goodness.       I’m not 100% sure. You would need to buy gluten-free sausage because I’m pretty sure sausage has gluten in. The rest of the ingredients just check the packaging to make sure they specify gluten free. Good luck!

    I Have to say that when I found this pinned on pinterest, I was so excited. I just finished making it and ate it with my family…. I am rather disappointed, it didn’t taste even close to the OG’s version. I’ll be making it again with this recipe as a base and changing some things to hopefully satisfy my craving for this yummy OG soup.

    I make this soup a lot, my recipe is similar but I’ve been making it for years and have perfected it! One of the things I do is brown my onions and garlic in a little butter or olive oil first, then cook the sausage in that, then drain all the oil very well, Next I add my water and potatoes and let that boil until the potatoes are soft. I add quite a bit of parmesan cheese to the soup as it is cooking and it gives it AMAZING flavor. I add the cream and kale last. I use chicken bouillon instead of broth:)

    low fat options, evaporated 2% canned milk… all the creaminess less than a quarter of the calories and spicy italian turkey sausage…. lean and low fat! been making this version for a couple of year atleast once a week for some picky teenagers. i never have leftovers even though the recipe is doubled! good stuff!

    My recipe is pretty much the same except I use skim milk. It works just as well. I did the cream the first couple of times, then wanted to make it one day and had everything but the cream, so I used the skim milk and liked it better. It also drops the calorie count significantly.

    This was delicious! Taste just like the restaurant. The only thing that I would suggest to anyone is not to use as much red pepper IF you are not a spicy person. Mine was a bit too hot for my taste. I also suggest a little garlic powder for taste! But I did love it! Thank you for sharing!

      Kale is great and it holds up really well in this soup. Spinach would get soggy and doesn’t have the same flavor at all. Try to give kale a try first 🙂

    So I saw this on pinterest and about had a heart attack. This is my FAV dish at Olive Garden which is my FAV restaurant but I moved to a new city and they don’t have one here 🙁 :'( So you can imagine I was SUPER excited!

    So I made it last night with my boyfriend! Turned out FANTASTIC! Although the 2 tsp red pepper flakes (like i’ve seen others post) was a bit much for me… boyfriend loved it… it was at my max haha but it was still a success! I LOVED it 😀 Thank you so much for posting this!

    You’ve forgotten the secret ingredients that give it it’s distinct flavor. About 2 tbsp of balsamic vinegar and a tsp or two of vanilla. Finish with a 1/4 stick of butter. You’ll be amazed, I promise. If you’re squeamish about it, put a bowl to the side add a little balsamic and vanilla and you’ll see. I hope u let us know what you think. 🙂

    My family thought 2 tsp of red pepper flakes was too spicy. Other than that it was amazing! Will be making again, probably cut back to 1/2 or 1 tsp. Thank you for sharing!

    I made this tonight, and it was the perfect soup for a cold night! I even used italian turkey sausage and fat free half & half, and it was delicious. I let it simmer on low for an extra 30 minutes, just to let the flavors combine, and it was a hit! It is going to be a winter staple in our home 🙂

    Just made this and finished eating it, and I have to say… I cannot stop raving about how good this is!!! So much like olive garden and absolutely delicious. Two things, one, I didn’t really measure the chicken stock or heavy cream, just added what I thought was appropriate for the taste and two I accidentally added the bacon crumbles in with the the potatoes and onions but I think it added a lot of extra flavor. Served with garlic bread for an incredible dinner. Thank you so much for is recipe!!!

    I saw this on the Frugal Girls website awhile back and bookmarked it, and I finally made it for my family last week and it was a HUGE hit! All 6 people in my family loved it–that’s very, very rare! I made a huge pot and we all gobbled it up in day. Delicious! Thank you soooo much for sharing this recipe!

    I made this for my family and they were SO impressed. It was a little spicy so next time I will probably use less red pepper but even with that it was super good and will become a regular recipe for me.

    My husband and I made this for dinner this evening and it was fabulous! We personally thought that the ratio of sausage to potatoes was off and next time we will double the potatoes and put half of the sausage. We might add a bit more bacon as well, but that could all be personal preference. Loved the taste! Thanks 🙂
