7 Layer Bars

I have yet to meet a person who doesn’t love Magic Cookie Bars – also known as 7 Layer Bars. They are universally loved and so customizable. We have so many versions that we’ve shared over the years and this Easter version may be my most favorite yet.

We’ve taken the classic magic cookie bar recipe and added some Cadbury eggs so they really scream “Easter!”. Another option would be to grab a bag of Easter M&Ms and use those instead. You can’t go wrong either way!

Magic Cookie Bar Recipe Ingredients

You’ll notice all the usual 7 layer bar ingredients in this recipe plus a few extras that take these treats over the top and make them perfect for Easter. As always, you can find the full, printable recipe card at the end of this post. Let’s take a quick look at what you’ll need:

  • Vanilla wafers: You can also use honey graham crackers, chocolate graham crackers, or another similar cracker that can be made into a crust. 
  • Salted butter: Unsalted butter can be used, but you will need a pinch of salt to help cut through the sweetness. 
  • Sweetened condensed milk: This is the “glue” that holds these bars together and is an ingredient that is present in every magic cookie bar recipe.
  • Quick oats: If you don’t have any quick oats, you can use rolled oats and run them through a food processor to make them into quick oats. The oats can also be omitted.
  • Milk chocolate chips: Switch this out for semi-sweet chocolate chips or dark chocolate chips.
  • Peanut butter chips: Try butterscotch or white chocolate chips instead. 
  • Coconut flakes: I used sweetened coconut flakes, but you can use unsweetened if that is the preference. 
  • Easter Chocolate Eggs: I used Cadbury Eggs for this recipe but you can also use M&Ms instead. I

Easily customize this recipe for other holidays by using M&Ms that correspond with the holiday. (I.e. red and green for Christmas, pastel for Easter, red white and blue for 4th of July, etc.)

How To Make 7 Layer Bars

  1. Preheat oven to 350°F and line baking dish with parchment paper.
  2. Make crust by combining the vanilla wafer crumbs and melted salted butter.
  3. Press into the bottom of the prepared baking dish. 
  4. Sprinkle the quick oats evenly over the crust.
  5. Add milk chocolate chips followed by the peanut butter chips.
  6. Sprinkle the coconut flakes on top of the chips.
  7. Pour the sweetened condensed milk evenly over the top and finish with the chocolate eggs.
  8. Bake in the oven for 18 to 20 minutes.
  9. Remove from the oven and let cool completely.
  10. Cut into bars and serve.

Storage Information

Cover bars tightly and store at room temperature for 2 to 3 days. After that, they need to go in the refrigerator and will last for about 7 days.

To Freeze: Cut into individual bars and wrap in plastic wrap and then transfer to a freezer safe ziploc bag. They will last up to 3 months and can be thawed at room temperature.

How do I store these Easter Magic Cookie Bars?

Cover these and store them on the countertop for 2-3 days. After that they need to go in the refrigerator and will last for about 7 days. To freeze, cut them up into individual bars and wrap them well. They will last up to 3 months and can be thawed at room temperature. 

Can I double this recipe?

This recipe can be challenging to double only for the simple fact that it’s hard to find a baking dish to accommodate the additional ingredients. If you do double, just use two 9 x 13 baking dishes.

Do I have to use quick oats?

Old fashioned oats won’t cook up as nicely as quick oats so either use quick oats or make your own by processing old fashioned oats in a food processor for a few pulses. If you don’t want to use oats, consider swapping in nuts for the oats. The bars are chewier with oats, crunchier with nuts.

Trish’s Tips and Tricks

This recipe is really straight forward but check out these tips for the best results!

  • Use a food processor to make crumbs of the vanilla wafers and then add the melted butter and pulse it all together instead of mixing it. If you don’t have a food processor, you can also place the wafers in a sturdy zipper plastic bag and use a rolling pin to crush them up. 
  • If you don’t have parchment paper, you can just use cooking spray, but make sure to spray the pan liberally. It can be difficult to cut and remove these bars without either parchment paper or a good greasing of the pan. 
  • Add a layer of crushed walnuts or pecans for some extra texture.
  • If you don’t like the look of the split chocolate eggs, you can add the eggs after the bars are done baking and have cooled slightly. However, they won’t stay on the dessert as well if you decide to do it this way unless you push them into the top when the dessert is still warm. 

Recipe Variations

  • Try different flavor chips like dark chocolate, butterscotch and white chocolate chips.
  • Add a layer of nuts (I prefer pecans or walnuts) instead of the oats. Keep in mind that the oats add chewiness to the bars whereas the nuts will add some crunchiness.
  • Try M&Ms or another candy in place of the Cadbury Eggs.
  • Don’t love Vanilla wafers? Consider using graham crackers, chocolate graham crackers, or another similar cracker that can be made into a crust instead.

You can change up these magic cookie bars to match any occasion simply by changing out the color or type of M&Ms or other candy that you use on the top! Christmas, Halloween, Valentine’s Day, even Birthdays can be celebrated with these delicious treats!

Ingredients

  • 2 ½ cups vanilla wafer crumbs ~ 70 cookies
  • 12 tablespoons salted butter 1 ½ sticks, melted
  • ¾ cup quick oats optional
  • 1 ¼ cups milk chocolate chips or semi-sweet chocolate chips
  • 1 ¼ cups peanut butter chips
  • ½ cup sweetened coconut flakes
  • 14 ounces sweetened condensed milk
  • ¾ cups Chocolate Easter Eggs roughly chopped (I used Cadbury Eggs)

Instructions

  • Preheat the oven to 350°F.
  • Prepare a 9×13 inch baking dish by lightly greasing with non-stick cooking spray and lining it with parchment paper. Set aside.
  • Combine the vanilla wafer crumbs and melted salted butter in a medium bowl and mix well to combine.
    2 ½ cups vanilla wafer crumbs, 12 tablespoons salted butter
  • Create the crust by pressing the vanilla wafer mixture into the bottom of the prepared baking dish. There is no need to go up the sides, just create an even layer on the bottom of the pan.
  • Sprinkle the quick oats evenly over the crust.
    ¾ cup quick oats
  • Add a layer of the milk chocolate chips followed by the peanut butter chips. Disperse these as evenly as possible as well.
    1 ¼ cups milk chocolate chips, 1 ¼ cups peanut butter chips
  • Sprinkle the coconut flakes on top of the chips.
    ½ cup sweetened coconut flakes
  • Pour the sweetened condensed milk evenly over the top and finish with the chocolate eggs.
    14 ounces sweetened condensed milk, ¾ cups Chocolate Easter Eggs
  • Bake in the oven for 18 to 20 minutes or until the coconut flakes start to brown and the chocolate eggs split open.
  • Remove from the oven and let cool completely.
  • When ready to serve, pull the dessert out with the parchment paper to make it easier to cut into bars. Serve at room temperature.
