For those of you that don’t know, I live in the Sacramento area here in California. After a really rainy start to the season, we’ve been experiencing Spring-like temperatures for several weeks now. I’m talking  mid-70’s you guys. My boys are wearing shorts to school and my fruit trees are in full bloom. I can almost guarantee that we’re going to have just ONE more windy storm that is going to wreak havoc on my trees. And then I’m going to cry.

The good news it that we’ve been grilling  every few days and the boys are burning off all their extra energy playing outside for hours each day after school. It’s like Spring is here…in February.

It’s hard to believe that March is next week and then we’re just a few short weeks away from Easter. The boys and I are going to be flying out to Virginia during Spring break to visit my little sister who is pregnant with her first baby. Very exciting! I’m throwing her a baby shower while I’m out there and it’s been interesting planning an event like that from across the country.

My plan is to send a big box of stuff over the week before we fly out so that I have most of what I need already there when we arrive. One of the menu items has to be fluff. It’s kind of my thing. I love it any way I can get it and I never get tired of making new versions.

Today I’m sharing this Three Minute Easter Fluff with you which also happens to be the perfect addition to my sister’s baby shower. I used colored marshmallows (a.ka. Funmallows) that add a sweet touch to this fluff. My Target was carrying the bunny shaped marshmallows so I grabbed a bag of those but the regular funmallows are just perfect too.

This fluff comes together in literally, 3 minutes. Maybe 2 1/2 if you’re speedy. It’s a one-bowl, dump and go dessert, that will have everyone sighing in delight. Perfect for your Easter celebration…or a baby shower!

Ingredients

  • 3.4 oz vanilla instant pudding mix
  • 1 cup crushed pineapple do not drain!
  • 1 8 oz container Cool Whip I used lite
  • 10 oz colored miniature marshmallows
  • 1 cup shredded sweetened coconut
  • ½ cup chopped nuts your favorite, optional

Instructions

  • Combine pudding mix and crushed pineapple in a large bowl.
  • Stir until completely combined.
  • Fold in Cool Whip, marshmallows, coconut, and nuts.
  • Chill until ready to served.
  • Sprinkle additional coconut on top just before serving if desired.

    Do you make the pudding as per the box instructions or just add it to the pineapple?
