School starts for us tomorrow. I’m scared. And excited. Both boys will be in school ALL day now that Bryce is in first grade. Whatever will I do with all that time???

My Bryce is an eater. He loves food and is hungry ALL.THE.TIME. Last year he would eat lunch at school, then come home for a second lunch and was ready for a snack before we walked over to pick up Reece. You feeling me?

So, as you can probably understand, it’s SUPER important that I feed both boys well in the morning, making sure to keep them full for as long as possible. This Bananas Foster Smoothie is our new favorite thing. I could drink this for breakfast, lunch and dinner and still want another for dessert.

It starts with a frozen banana. I freeze bananas A LOT. They are perfect for smoothies and shakes. I cut my bananas in half lengthwise and then in half again crosswise, essentially quartering the banana. Just pop them in the freezer overnight on a parchment line baking sheet and they’ll be ready for you in the morning. (Once frozen, you can store bananas in a freezer bag.)

I use a half a banana for each serving so when I’m making it for the boys in the morning I use one full banana.

I add plain Greek yogurt for a protein-packed punch and then sweeten and flavor the smoothie with a little brown sugar, cinnamon, rum and banana extract (these are optional) and International Delight Caramel Macchiato creamer. Yum. This stuff is not just for coffee!

Everything gets blended with a little bit of milk until nice and creamy and then, if the boys are lucky, I top the smoothie with a little bit of whipped cream. Note: I always top MINE with whipped cream 🙂

Of course, if you’re not feeling like a smoothie, feel free to just pour some of that Caramel Macchiato into your morning coffee like I do and sit back and relax. Coffee house flavor on the cheap.

Ingredients

  • 1 frozen banana quartered
  • 1 cup plain Greek yogurt not sweetened
  • 1 tbsp brown sugar
  • 1/2 cup milk
  • 1/4 cup Caramel Machiatto creamer
  • 1/2 tsp ground cinnamon
  • 1/2 tsp rum extract optional
  • 1/2 tsp banana extract optional

Instructions

  • Combine all ingredients in a blender and blend until smooth.
  • Top with whipped cream and additional cinnamon if desired.
  • To make a shake, replace the Greek yogurt with vanilla ice cream. Drizzle caramel sauce on top - yum!

    Looks & sounds yummy but I am watching calories. I use the frozen bananas as a base for smoothies but I use Almond milk and unfortunately have to skip the whip. I use plain Greek yogurt & cinnamon a lot as well. I’m wondering if the almond milk (unsweet) would affect the taste too much here. Last fall I made smoothies with cannot pumpkin … yummm … and I’m not a fan of pumpkin. lol
