Amaretto Chocolate Truffles

For chocolate lovers, truffles really are the ultimate treat. Rich, bold chocolate flavor in a bite size package makes truffles truly irresistible. The fact that you can easily flavor them with a little liqueur makes for a very versatile candy.

These Amaretto Truffles are perfect for the holidays, Valentine’s Day and of course any time you have a serious chocolate craving. Chocolate purists, these are for you!

What Are Truffles?

Heavenly candies that are perfect for a special treat! Truffles are essentially chocolate ganache (a combination of chocolate and heavy cream melted together) rolled into balls and then rolled in a complementary ingredient to coat the exteriors of the truffles. This makes it so the truffles can be easily handled and picked up without the chocolate melting on the inside.

There is no end to the truffle variations you can create just by changing up the coating. Here are some fun ideas:

  • jimmies or sprinkles
  • ground nuts (pecans, walnuts, almonds, pistachios, etc.
  • cocoa powder
  • mini chocolate chips

Ingredients Needed

One of the best thing about truffle recipes is that they require so few ingredients! (Scroll down to the recipe card for the printable recipe.) Let’s take a quick look at what you’ll need:

  • bittersweet chocolate – buy the nicest chocolate you can afford. It really does make a difference. I don’t recommend using chocolate chips for this recipe.
  • heavy whipping cream – combined with the chocolate
  • Amaretto liqueur – this is an almond flavored liqueur that goes so incredibly well with chocolate.
  • vanilla extract – use the good stuff for the best flavor!
  • cocoa powder – this creates a lovely chocolate coating on the exterior of the truffles. I used Hershey’s Special Dark Cocoa.
  • almonds – pop the almonds in a food processor for a few minutes until they are finely minced. You’ll roll some of the truffles in the minced almonds.

How To Make Truffles

You’re not going to believe how easy truffles are to make! Just follow these simple steps to truffle bliss:

  1. Chop chocolate into small pieces and place in a medium bowl.
  2. Bring the cream to a simmer in a small saucepan and then pour the cream over the chocolate and stir together until all the chocolate is melted and the mixture is smooth.
  3. Stir in the Amaretto and vanilla extract and stir until combined and the mixture is smooth.
  4. Cover and chill in the fridge for at least 4 hours or until firm.
  5. Use a small cookie scoop and roll mixture into 1 inch balls.
  6. Roll the truffles in the cocoa powder or minced almonds.
  7. Refrigerate until ready to enjoy.

Truffle FAQs

How should truffles be stored?

Truffles should be stored in the refrigerator in an airtight container. They will last for 1 week when stored properly.

What other liqueurs can I use in this recipe?

Any liqueur you like! I particularly love raspberry flavors, Bailey’s, and Kahlua but any will work.

What else could I roll the truffles in?

Try mini chocolate chips, jimmies or colored sprinkles for a pop of color!

What kind of chocolate should I use?

Use (2) 4 ounce semi sweet or dark chocolate bars in this recipe, not chocolate chips. You can find the bars in the baking aisle. I like Ghirardelli or Scharffen Berger.

Amaretto Chocolate Truffles

Ingredients

  • 8 ounces chocolate finely chopped
  • ½ cup heavy whipping cream
  • 1.5 ounces Amaretto liqueur
  • 1 teaspoon vanilla extract
  • â…“ cup cocoa powder I used Hershey's Special Dark Cocoa
  • â…” cup sliced almonds

Instructions

  • Chop chocolate into small pieces and place in a medium heat proof bowl. Set aside.
  • Place sliced almonds in a food processor and pulse 10 to 15 times until finely chopped or minced.
  • Add the cream to a small saucepan and bring just to a simmer. Pour the cream over the chocolate and stir together until all the chocolate is melted and the mixture is smooth.
  • Stir in the Amaretto liqueur and vanilla extract and stir until combined and the mixture is smooth.
  • Cover the bowl with plastic wrap and chill in the fridge for at least 4 hours or until firm.
  • Use a small cookie scoop and roll mixture into 1 inch balls.
  • Roll the truffles in the cocoa powder or almonds.
  • Refrigerate in an airtight container until ready to enjoy.
