Today kicks off a week of waffles here at Mom On Timeout!  Let me tell you – my hubby and kids are super excited :) We’re starting the party right with these absolutely scrumptious Grilled Peanut Butter Honey Banana Waffle Sandwiches – yeah, it’s a mouthful!  Gone is the boring PB&J for lunch!  We’re turning up the heat with this grilled waffle sandwich and your kids are going to L.O.V.E. it!

We used the Honey Oat Eggo waffles for this sandwich and it goes beautifully with the banana and peanut butter.  I also love that the waffles have whole grains which really round off this lunch.  Grilling the sandwich makes the peanut butter so soft and creamy and the little bit of honey makes the sandwich just a bit sweet – perfect for the kiddos!


The sandwich gets lightly grilled and becomes absolute perfection!  Use crunchy or smooth peanut butter to suit your kid’s preferences.  Don’t you just want a bite right now??

Grilled Peanut Butter Honey Banana Waffle Sandwiches
  • 2 Eggo Honey Oat Waffles
  • 2 Tbls peanut butter
  • ½ banana sliced
  • 1 tsp honey
  • 1 tsp butter
  1. Prepare the waffles according to the package instructions.
  2. Spread 1 tablespoon of peanut butter on each waffle.
  3. Layer on the banana and drizzle on the honey.
  4. Put the sandwich together and grill over a lightly butter hot griddle until golden brown.
  5. Serve hot and enjoy!

The first recipe on this list has been my pregame meal since 9th grade (I play basketball), its an awesome energy boost an hour before a game or a big workout (I don’t recommend eating within an hour of working out heavily though). If you are running short on time, toasting the waffles will melt the peanut butter so that it is still gooey and take out the grilling step. I used Kachi waffles to get extra nutrients in high school but when I went off to college I switched to the honey oat flavor (a little cheaper but still just as yummy). I also used to use peanut butter and honey; however, I find that the Peter Pan Honey Roasted Peanut Butter gives it the same flavor (with no added calories). Also, have you seen the s’mores flavored Eggo waffles, they may make your smores treats even tastier; however, they would be much larger and no longer sliders.

  15. I love this recipe, Trish! Peanut butter and banana is already a great combo, but waffles instead of bread is genius! How fun to have a week of waffles at your house. I should try something like that.

    Couldn’t find the Honey Oat waffles, but made them instead with buttermilk waffles. They were FANTASTIC!! Kids loved them. They also worked out fine without grilling (saved time for school morning), and makes it easy to run out of the house with a not-so-messy “sandwich”. Today, I added a few mini chocolate chips on top of the peanut butter, and they were even better! Thanks for the idea.
