So excited to be back sharing yet another amazing recipe as part of my ACH Ambassador program!  Today I’ve got some drool-worthy bars for you!  Everyone loves a good bar right?  Magic bars are definitely my guilty pleasure – all that yumminess packed into one sweet little package – how could I possibly resist?  Today I’ve got a great twist on a magic bar that uses two of my favorite ingredients – coconut and toffee!  Sooo yummy people!

The base of the bar, as well as the topping, is a delicious chocolate chip oatmeal cookie.  Not a bad way to start and finish am I right?  The center is ooey-gooey sweetened condensed milk and Karo Syrup topped with an entire bag of Heath Milk Chocolate Toffee bits.  Yeah.  I know.  Purty aren’t they?

These Coconut Toffee Chocolate Chip Cookie Bars would be something that I would see at a bake sale and snatch up in a heartbeat.  Speaking of bake sales – when was the last time you helped out at a bake sale?  They’re hard to find these days aren’t they?  Good news though - Fleischmann’s Yeast and Karo Syrup are helping end childhood hunger in America by supporting the Share Our Strength’s No Kid Hungry Campaign.  You can help donate $200,000 to the No Kid Hungry Campaign by starting a “Virtual Bake Sale” on the Fleischmann’s Yeast and Karo Facebook pages.   Simply like their Facebook page and then select 10 recipes for your virtual bake sale to get started.  Make sure to share with your friends between now and May 12th, you could win a weekly prize pack or the grand prize – a KitchenAid® mixer!

As an ACH Ambassador I had the opportunity to create this delicious recipe using Karo Syrup.  Fleischmann’s Yeast and Karo Syrup (contains 0 grams of high fructose corn syrup) are two trusted products that have helped people like you and I create gorgeous homemade bread and delicious, beautiful desserts for more than 100 years.  I know these are two products that I have used my entire life and grew up watching my mom use.  They are products that I trust and am proud to serve to my friends and family.

Oh my, all my favorite flavors in one!

  18. My mouth is watering just looking at the pictures of these bars. My hubby likes to take Dippers or Nature Valley bars in his lunch so something like this is great. Any way of putting the nutritional value, especially the calories along with your recipes when you post them. Can’t wait to try this one out.

  19. How did you manage to fit so many things I love in one bar? I love classic magic bars, but that toffee takes these to another level!

  20. Ok, now I really need to make these. My downfall is after 7 pm, chocolate, coconut and butter. Oh goodness. They are calorie and fat free, right? haha. Looks divine.

  25. Oh my, these look so good. I’ve never baked with Karo syrup before. I love trying new recipes.

  26. wow, what a treat! They sound so deliciously tropical.

  27. Trish, I had a had time getting the top layer spread out on top of the center…. What am I doing wrong? The center came to the outside of the bar while baking also.

    • Hi Karen! You don’t need to spread out the top layer of the dough. Just drop teaspoonfuls of the crust mixture on the top and it should spread out on it’s own. It’s okay of a little of the center comes to the top in some places but it shouldn’t “rise” to the top for sure. Hope that helps!

  28. These are like an ultimate cookie bar! Sounds amazing!

  29. Yum!

I would love for you to share this and link up to my TGIF Link Party! Who knows, you just might be featured next week!

  38. Thank you Trish for the nice recipe.

  39. Cheryl S says:

Hey Trish, could I add some walnuts to this also?

  40. Trish,
I have a question regarding the toffee pieces, when the bar bakes, do the toffee pieces soften? I have a child who has braces, and I am concerned about breaking a bracket/wire.

    thanks,

    susan
