I can’t believe that January is almost over. I mean, really, where has the month gone? My boys are already picking out their Valentines for school friends and I’m thinking, wait, what? Valentine’s Day? Already?

As fast as January has gone by, it’s been a month of taking time for myself and I’ve been LOVING it. I made a whole bunch of New Year’s Resolutions this year and while I haven’t stuck to all of them, I’m doing good. Really good!

Now you all know I have a sweet tooth that never quits. I am always looking for ways to skinny up recipes that I love. The other night we all went out to dinner at Chicago Fire Pizza and then walked across the street to Rick’s Dessert Diner. Yeah. That was one of those days that I didn’t do so well lol!

Bryce picked out a 6-layer Red Velvet Cake for his dessert and after taking just one bite, I was pretty sure I had died and gone to heaven. Intense. Amazing. And I wanted it again for breakfast. So, instead of eating cake for breakfast, I made this Skinny Red Velvet Shake. It was awesome!

I started with Greek frozen yogurt (vanilla or chocolate will do) and added some red velvet cake mix, a scoop of protein powder (chocolate for me!), and Blue Diamond Almondmilk Cashewmilk blend for seriously amazing flavor. Honestly you guys, if you haven’t had a chance to try this milk yet – now is the time. It is absolutely delicious and comes in regular, vanilla, and unsweetened varieties. I used the regular but the unsweetened or vanilla would be terrific too!

Now the thing that is so special about red velvet cake is the cream cheese frosting – it’s the perfect complement! I had to incorporate it somehow and came up with this cream cheese whipped cream that is guaranteed to knock your socks off! I’m going to be putting this stuff on everything.

This Skinny Red Velvet Shake is the perfect treat for Valentine's Day or whenever you need a little something special. Topped with a decadent cream cheese whipped cream, this skinny shake is hard to resist! Great for breakfast or dessert!

So if you’re one of those people that are sticking to your New Year’s Resolutions like glue – good for you! Keep up the good work and when you’re thinking of walking on the wild side – give this shake a try! It would make a really delicious and lighter alternative for Valentine’s Day as well!

What a perfect little Valentines treat! It sure did get here fast, I couldn’t believe when I was at Target the week following Christmas and saw Valentines day stuff. I’m guessing in the next 2 weeks we’ll start seeing Easter baskets!

That cake sounds really good. I mean, this smoothie looks amazing, and I’m sure it helped with that craving and then some. But a 6-layer cake…yeah, I want that too! 🙂
