Ritz S’mores Cookies Ingredients
These cookies are so fun and quick to make! We make these year-round because that sweet and salty combination just can’t be beat. Perfect for summer because of the s’mores flavor and also for Christmas cookie trays! Just 3 ingredients in these cookies and then you can choose if you want to decorate the top or not. Let’s take a quick look at what you’ll need:
- Ritz Crackers – use the real Ritz crackers for the best results. They are a little crisper and hold their shape better without crumbling.
- marshmallow creme – or marshmallow fluff. This is what goes inside the Ritz sandwich cookies and holds the crackers together. If you’d like to use marshmallows instead of marshmallow creme, you can. You will need to cut the marshmallow in half and then also trim off the top party to make it “tacky” so it will stick to the cracker.
- chocolate almond bark – I like milk chocolate for this recipe but you could absolutely use dark chocolate or white chocolate. Elevate the flavor by using Ghirardelli melting wafers instead of almond bark.
To Decorate
You can leave the cookies plain or top them with one or more of these fun optoins
- crushed graham crackers
- marshmallow bits
- mini chocolate chips
- sprinkles or jimmies (holiday colors)
How To Make S’mores Cookies
These easy no bake cookies take no time at all to make and are ready to enjoy in less than 30 minutes!
Make the Cookie Sandwiches
- Melt almond bark according to package directions.
- Line baking sheet with parchment paper or wax paper.
- Place Ritz crackers on the baking sheets.
- Spoon 1 to 2 teaspoons of marshmallow creme on each cracker. (Grease your spoon for easy removal of the marshmallow.)
- Gently press another cracker on top.
- Carefully dip the s’mores cracker sandwich into melted chocolate.
- Repeat with remaining crackers.
To Decorate
- If you’d like to decorate the top of the s’mores cookies, now is the time to do it. I like to use crushed graham crackers, marshmallow bits and mini chocolate chips but colorful sprinkles are also fun. We do red and green jimmies for Christmas!
- Allow the cookies to set up until the chocolate is hard and enjoy!
Storage Information
Let the chocolate coating harden completely. Store cookies in an airtight container for up to 5 days at room temperature or in the fridge. Separate layers of cookies with pieces of wax or parchment paper.

How To Make No Bake Ritz S’mores Cookies
Ritz S’mores Cookies
Ingredients
- 48 Ritz Crackers
- 7 ounces marshmallow creme or marshmallow fluff
- 24 ounces chocolate almond bark or Ghirardelli melting wafers
Optional Toppings
- ½ cup graham cracker crumbs
- ½ cup marshmallow bits
- ½ cup mini chocolate chips
- ½ cup sprinkles or jimmies
Instructions
- Place almond bark in a microwave safe bowl and melt according to package directions. (I like to do 30 seconds at 50% power, stir, repeat, until fully melted.)
- Line 2 large baking sheets with parchment paper or wax paper. Place half of the Ritz crackers on the baking sheets.
- Place 1 to 2 teaspoons of marshmallow creme on the center of each cracker. (Grease your spoon for easy removal of the marshmallow.)
- Place another Ritz on top of the marshmallow creme. Gently press the crackers together to create an even layer of marshmallow in between.
- Use small tongs or a fork to carefully dip the s'mores cracker sandwich into melted chocolate. Tap the fork or tongs against the side of the bowl to remove extra chocolate and then place on lined baking sheet. Repeat with remaining crackers.
