Next, they’re wrapped in the bacon, rolled in brown sugar and along with a gorgeous juicy pineapple chunk, speared by a toothpick. Couldn’t be easier. Off to the oven for a quick bake and then a few minutes under the broiler and you’ve got a mouth-watering, finger-licking good appetizer on your hands.
Let’s take a quick look at how to make this teriyaki meatball recipe and as always, you can find the full printable recipe card at the end of this post.
- Cut chicken into bite-size pieces and place in ziploc bag.
- Combine pineapple juice and teriyaki sauce.
- Add to the chicken pieces. Refrigerate for one hour, turning the bag once.
- Cut the strips of bacon into thirds.
- Place a piece of chicken on each bacon strip,.
- Wrap each piece of chicken with a strip of bacon.
- Roll in brown sugar.
- Push a toothpick through a pineapple chunk and then through the bacon-wrapped chicken.
- Place on prepared baking sheet or broiler pan.
- Work in batches if necessary.
- Bake for 20 to 25 minutes or until chicken is cooked through, turning chicken bites once.
- Broil for 2 to 3 minutes per side until bacon is nice and crispy. Serve immediately!

Homemade Teriyaki Sauce Recipe
Store bought teriyaki sauce works perfectly in this recipe and saves time when making this recipe but, it’s super easy to make if you have a few minutes. Here’s a quick and easy recipe for Teriyaki sauce:
- 1/4 cup water
- 1 tablespoon cornstarch
- 1/2 cup tamari or low sodium soy sauce
- 1/4 cup light or dark brown sugar
- 1 teaspoon ginger paste or 1 ½ fresh minced ginger
- 1 teaspoon minced garlic
- 1 tablespoon honey
- 1 1/2 teaspoons toasted sesame oil
- 3 tablespoons mirin
Whisk water and cornstarch together in a small saucepan. Add remaining ingredients and whisk to combine. Bring to a boil over medium heat. Reduce heat to low and simmer for 4 minutes. Remove from heat, let cool completely before transferring to an airtight container and storing for up to 1 week.

Bacon Wrapped Chicken Teriyaki Bites
Ingredients
- 1 pound boneless skinless chicken breasts
- 1 pound bacon not thick cut
- 20 ounces pineapple chunks in 100% pineapple juice
- ¾ cup low-sodium Teriyaki sauce
- ¾ cup light brown sugar
- toothpicks soaked in water for at least an hour
Garnish (Optional)
- green onions thinly sliced
- sesame seeds
Instructions
- Cut chicken into bite-size pieces.1 pound boneless skinless chicken breasts
- Drain the juice from the can of pineapple chunks. Cover and refrigerate the pineapple chunks until needed. Combine the pineapple juice and teriyaki sauce in a large resealable plastic bag or bowl.20 ounces pineapple chunks, ¾ cup low-sodium Teriyaki sauce
- Add the chicken pieces to the bag, seal and refrigerate for one hour, turning the bag once.
- Preheat oven to 350°F. Line a baking sheet with foil and place a rack on top (can also cook directly on foil or even parchment). Spray with nonstick cooking spray and set aside.
- Cut the strips of bacon into thirds. Working in batches, wrap each piece of chicken with a strip of bacon and roll in brown sugar.1 pound bacon, ¾ cup light brown sugar
- Push a toothpick through a pineapple chunk and then through the bacon-wrapped chicken. Place on prepared baking sheet.toothpicks
- Bake for 20 to 25 minutes or until chicken is cooked through, turning chicken bites once.
- Turn on broiler and broil for 2 to 3 minutes per side until bacon is nice and crispy. I left my pan on the middle rack so the toothpicks wouldn’t burn. Always keep on eye on your food when using the broiler. Things happen fast!
