Next, they’re wrapped in the bacon, rolled in brown sugar and along with a gorgeous juicy pineapple chunk, speared by a toothpick. Couldn’t be easier. Off to the oven for a quick bake and then a few minutes under the broiler and you’ve got a mouth-watering, finger-licking good appetizer on your hands.

Let’s take a quick look at how to make this teriyaki meatball recipe and as always, you can find the full printable recipe card at the end of this post.

  1. Cut chicken into bite-size pieces and place in ziploc bag.
  2. Combine pineapple juice and teriyaki sauce.
  3. Add to the chicken pieces. Refrigerate for one hour, turning the bag once.
  4. Cut the strips of bacon into thirds.
  5. Place a piece of chicken on each bacon strip,.
  6. Wrap each piece of chicken with a strip of bacon.
  7. Roll in brown sugar.
  8. Push a toothpick through a pineapple chunk and then through the bacon-wrapped chicken.
  9. Place on prepared baking sheet or broiler pan.
  10. Work in batches if necessary.
  11. Bake for 20 to 25 minutes or until chicken is cooked through, turning chicken bites once.
  12. Broil for 2 to 3 minutes per side until bacon is nice and crispy. Serve immediately!

Homemade Teriyaki Sauce Recipe

Store bought teriyaki sauce works perfectly in this recipe and saves time when making this recipe but, it’s super easy to make if you have a few minutes. Here’s a quick and easy recipe for Teriyaki sauce:

  • 1/4 cup water
  • 1 tablespoon cornstarch
  • 1/2 cup tamari or low sodium soy sauce
  • 1/4 cup light or dark brown sugar
  • 1 teaspoon ginger paste or 1 ½ fresh minced ginger
  • 1 teaspoon minced garlic
  • 1 tablespoon honey
  • 1 1/2 teaspoons toasted sesame oil
  • 3 tablespoons mirin

Whisk water and cornstarch together in a small saucepan. Add remaining ingredients and whisk to combine. Bring to a boil over medium heat. Reduce heat to low and simmer for 4 minutes. Remove from heat, let cool completely before transferring to an airtight container and storing for up to 1 week.

Storage Information

  • Refrigerator: These bites are best served fresh and hot, but leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat them in the oven or air fryer to help crisp the bacon again.
  • Make Ahead: The bacon-wrapped bites can be assembled a few hours ahead and kept refrigerated until ready to bake.
  • Freezer: Freezing is not recommended once assembled.

Variations To Try

  • Swap chicken breasts for boneless chicken thighs for extra juiciness

Can these be cooked in the air fryer?

Yes, air fry at 375°F for about 10 to 12 minutes, turning once, until the chicken is cooked through and the bacon is crispy.

Do I need to soak the toothpicks?

Yes, soaking the toothpicks helps prevent burning, especially when broiling at the end.

Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1 pound bacon not thick cut
  • 20 ounces pineapple chunks in 100% pineapple juice
  • ¾ cup low-sodium Teriyaki sauce
  • ¾ cup light brown sugar
  • toothpicks soaked in water for at least an hour

Garnish (Optional)

  • green onions thinly sliced
  • sesame seeds

Instructions

  • Cut chicken into bite-size pieces.
    1 pound boneless skinless chicken breasts
  • Drain the juice from the can of pineapple chunks. Cover and refrigerate the pineapple chunks until needed. Combine the pineapple juice and teriyaki sauce in a large resealable plastic bag or bowl.
    20 ounces pineapple chunks, ¾ cup low-sodium Teriyaki sauce
  • Add the chicken pieces to the bag, seal and refrigerate for one hour, turning the bag once.
  • Preheat oven to 350°F. Line a baking sheet with foil and place a rack on top (can also cook directly on foil or even parchment). Spray with nonstick cooking spray and set aside.
  • Cut the strips of bacon into thirds. Working in batches, wrap each piece of chicken with a strip of bacon and roll in brown sugar.

  • Push a toothpick through a pineapple chunk and then through the bacon-wrapped chicken. Place on prepared baking sheet.

  • Bake for 20 to 25 minutes or until chicken is cooked through, turning chicken bites once.
  • Turn on broiler and broil for 2 to 3 minutes per side until bacon is nice and crispy. I left my pan on the middle rack so the toothpicks wouldn’t burn. Always keep on eye on your food when using the broiler. Things happen fast!
  • Serve immediately garnished with thinly sliced green onions and/or sesame seeds if desired.

    You might try soaking the toothpicks in water for 1/2 to 1 hour before wrapping. Helps prevent burning,

    Adding these to the New Year’s Appetizer Menu. A few ideas. Use round toothpicks or bamboo sticks, cut uniform size chicken & thin sliced bacon vs thick cut. Made approx 40 bites.

    It is OK considering Dole and their commitment to good clean products, but that bacon! It is not normal, cured bacon, in fact that actually isn’t bacon. It is battery pork injected with salts and bacon flavor. Bin it and buy some real bacon, cured properly that you have sourced from a local, small scale producer, Same with the chicken. Do not ever buy Tyson or Pilgrims pride etc, never ever, it has been possibly frozen, thawed, allowed to go off, washed in chlorine and re-frozen, This is allowed to be done in the US three times before it is sold to be fed back to chickens, which is gross. This chicken could be 5-6 years old and still passed as edible. Also, It is most likely to have been injected with brine and carageen or seaweed. This is known as “Plumping” it is done to add weight to the chicken (more $$$$) and to make it appear wholesome and nutritious, which it isn’t. Go local, go real food.

      Putting bacon directly on a grill will most likely result in a lot of flare-ups… Please be careful if you do try it that way!

    Decided to make these for Super Bowl and extra for the next Sunday for a birthday party. I’ll make some and freeze the chicken til next Saturday and pull it out and make the rest of them….killing 2 birds with one stone.
