Weekday morning breakfasts, fun, no? I can recall many a morning walking to school with a handful of graham crackers and an apple trying to get the boys to take bites as we go. Pitiful.

Unless I am totally on my game, breakfast is minimal, not fun, and frequently overlooked.

Fortunately, I am aware of the importance of a good breakfast and so I can keep us to a pretty tight routine in the mornings. Most mornings that is 😉

At the start of the school year my boys would wake up and go almost immediately to the TV in search of the lastest recording of Curious George or Wild Kratts. They would eat breakfast in front of the TV while they slowly woke up. I’d get their clothes ready and check backpacks, etc.

I think it was about the third week of school when I realized that I had driven the boys to school three times that week. We live three blocks away. Yeah. Awesome, right?

The TV got dumped. No TV in the morning for us anymore and let me tell you, it has made a world of difference. They now get dressed by themselves, get their backpacks ready, and are generally more “alive” in the mornings. Sure, I still make breakfast but that’s my job after all; I’m their mom.

My boys are big smoothie drinkers, you guys know that. I recently had the opportunity to try an entirely new brand of yogurt, made here in the USA and inspired by the Aussies. It’s Yulu and it’s fabulous! I love how incredibly creamy this yogurt is and so did the boys. Double-smoothed, double delicious, and 9 g of protein per serving, LOVE! If you’re one of those people who find Greek yogurt a little on the sour side you simply must try Yulu!

Once I had a chance to try the yogurt, I knew immediately that I wanted to make a new smoothie, one that would wow the boys.

The layers on this smoothie are what make it fun. The yogurt makes it exceptional. Starting at the bottom is pineapple, the middle is mango, and the top is strawberry. I used vanilla yogurt for all three layers but you can use whatever you like.

The trick to the layers is simple, you can pour in the bottom layer but you need to spoon in the top two to keep them separate. It takes, you know, like an extra minute or two but watching my Bryce and Reece suck on those straws is totally worth it.

Ingredients

Layer 1 - Pineapple

  • 1/2 cup frozen pineapple chunks
  • 1/4 cup vanilla yogurt
  • 1/4 cup coconut milk I used light

Layer 2 - Mango

  • 1/2 cup frozen mango chunks
  • 1/4 cup vanilla yogurt
  • 1/4 cup coconut milk I used light

Layer 3 - Strawberry

  • 1/2 cup frozen strawberries
  • 1/4 cup vanilla or strawberry yogurt
  • 1/4 cup coconut milk I used light

Instructions

  • Blend ingredients for layer one. Pour into two glasses, dividing equally.
  • Blend ingredients for the second layer. Spoon into the two glasses, dividing equally.
  • Blend ingredients for the top layer and spoon into the two glasses, dividing equally.
  • Top with shredded coconut if desired.
