Fall is here and for me that means I get to start using my slow cooker. I love being able to start a meal in the morning and eliminate some of the stress of the evening. This recipe is so simple and yet incredibly flavorful. Two ingredients – tons of flavor. The salsa acts as the cooking liquid and seasoning all in one. Use your favorite salsa to get all those flavors you love.

Slow Cooker Salsa Chicken is perfect for nachos, burritos, tacos, and quesadillas. I like to double the recipe and freeze some for later. It just doesn’t get any easier than this.

Ingredients:

2 boneless, skinless chicken breasts
12-16 oz jar ofĀ  your favorite salsa

5 SECRETS TO GETTING DINNER ON THE TABLE...FAST!

Plug in your slow cooker and add the salsa and the chicken. Cook on low for 6-9 hours. I’m using a 2 quart slow cooker.
(You can cut your chicken into smaller pieces if you need it to cook faster.)

Thirty minutes before you are ready to eat, shred the chicken with two forks. This allows the meat to absorb more flavor from the salsa. The chicken will literally fall apart because it’s so tender – yum!

Serve the chicken in your favorite Mexican entree – we did burritos this time and they were amazing! Give this one a try – it’s delicious!
