It is about this time of the year, every year, when I begin to wonder why it is that I live in Sacramento, aka, hotter than heck in June and July.

My family and I are constantly looking for ways to cool off – it’s not a splurge, it’s a necessity.

With temps hitting triple digits this week I decided that it was time for a “treat yo’self” kinda day. And gosh darnit, I did.

If you’re anything like me, this situation may sound familiar….

You’re looking at the drinks menu and having the hardest time deciding what to order…a Pina Colada…or a Strawberry Daiquiri. It’s an age-old dilemma to which the solution is surprisingly easy, and fantastically delicious. The Miami Vice is a cocktail that is sure to please – I mean, who doesn’t like a 2-for-1 situation like this??? (And y’all know that I am a SUCKER for all things pina colada!)

I decided to give the classic cocktail a bit of a milkshake twist but didn’t want to blow the calorie budget, if you know what I mean. I used Almond Breeze Vanilla Almond Coconut Milk for the “milk” in the shake and instead of ice cream, used a frozen banana. At just 45 calories per serving, this is my favorite Almond Breeze yet! The fruit and juice give plenty of sweetness to this shake so you’re definitely not missing out.

Now, because my boys are constantly breathing down my neck when I’m in the kitchen blending away, I knew a kid-friendly version was in order. I used rum extract for delicious flavor. Now everyone can cool off with a Skinny Miami Vice Shake together!

I used my trusty Ninja blender for all the magic here today. It’s super powerful and is able to blend all the frozen fruit together without any difficulty. Please feel free to add additional frozen fruit if you want a thicker shake, or more Almond Breeze to thin it out.

Top with an umbrella and some fresh strawberries and pineapple wedges for a festive flair – perfect for summer!

Ingredients

Pina Colada

  • 1 banana sliced and frozen
  • 1/2 cup frozen pineapple
  • 1/2 cup Almond Breeze Vanilla Almond Coconut
  • 1/2 cup pineapple juice
  • 1/2 tsp coconut extract
  • 1/2 tsp rum extract
  • 1 cup ice

Strawberry Daiquiri

  • 1 banana sliced and frozen
  • 1 cup frozen strawberries
  • 1 tsp lemon juice
  • 1 tsp lime juice
  • 1/2 cup Almond Breeze Vanilla Almond Coconut
  • 1/2 tsp rum extract
  • 1 cup ice

Instructions

Pina Colada

  • Combine all ingredients in a blender and blend until smooth.
  • If the mixture is too thick, add some more almondmilk. If it is too thin, add some more frozen fruit.

Strawberry Daiquiri

  • Combine all ingredients in a blender and blend until smooth.
  • If the mixture is too thick, add some more almondmilk. If it is too thin, add some more frozen fruit.
  • Pour both shakes into a glass at the same time or layer one on top of the other.
