All moms need a little help in the kitchen from time to time – at least I do! I have found that purchasing a Rotisserie Chicken is cost-effective and very versatile. I can usually get at least two meals out of one chicken and the meat is moist and flavorful. One recipe that I like to make is Rotisserie Chicken Salad Sandwiches.

It takes minutes to prepare and tastes delicious. Using apples and raisins create great texture and crunch as well as added sweetness.

5 SECRETS TO GETTING DINNER ON THE TABLE...FAST!

Ingredients:
2 c chopped, cooked chicken
1 c diced apple (I use Gala)
1/2 c raisins
1/4 c mayonnaise
1 tsp celery seed
salt and pepper to taste
bread (your choice)

Directions:

Chop up the chicken using your choice of dark or white meat – I use both. Dice the apple into small, bite-sized pieces.

Combine all ingredients in a bowl and stir until the mayonnaise is evenly incorporated. Chill for at least thirty minutes.

Serve on your choice of bread with lettuce or sprouts. I love this recipe on Sourdough Walnut Wheat Bread  – yum! This is really the perfect weeknight meal and the flavors are so lovely – delicious and nutritious!

This delicious and easy recipe is one of several that inspired my new book 100 Creative Ways to Use Rotisserie Chicken in Everyday Meals. I love using rotisserie chicken to create meals that my family will love. You’ll find casseroles, bakes, comfort food, soups, sandwiches and more!

I love rotisserie chickens too. Fresh Market makes their chicken salad with it. Yummy. So, instead of adding an apple and raisins (since fruit with meat will ferment in your stomach–fruit should be eaten alone), I will add pecans. Thanks!

I adore rotisserie chickens. I just bought an extra this week to make chicken salad with. Never thought of adding raisins, though! 🙂
