Whether you’re serving this tasty summer salad as a show stopping side dish or as a light meal, you’re going to love the combination of textures and flavors. Let’s take a quick look at what you’ll need for this gorgeous peach salad recipe and, as always, you can find the full printable recipe card at the end of this post.

For the Peach Salad

  • Arugula – Arugula serves as the base for the salad, adding a slight bitterness that complements the sweetness of the peaches. If you’re not a fan of arugula, consider a lovely, light spring mix for the base of the salad.
  • Peaches – Ripe peaches provide a burst of sweetness and juiciness to the salad. Look for firm, peaches with a slight give when mild pressure is applied.
  • Tomatoes – I love large heirloom tomatoes in this recipe as they add so much flavor and freshness but any tomatoes can be used.
  • Burrata Cheese – This luscious cheese adds a rich, creamy texture to that salad that complements the other ingredients wonderfully.
  • Pine Nuts – Toasted pine nuts add a crunchy contrast and are so delicious paired with the tomatoes and peaches. If you can’t find pine nuts, they can be omitted or substituted with any other nut of your choosing. Pistachios would be delicious in this recipe.
  • Basil – Fresh basil adds a beautiful aroma and flavor tying the other ingredients together.

For the Balsamic Vinaigrette

A quick and easy balsamic vinaigrette perfectly dresses this salad. It is made with olive oil, balsamic vinegar, honey, Dijon mustard, garlic powder and salt.

How To Make Peach Burrata Salad

This salad comes together so quickly and don’t forget, the dressing can absolutely be made in advance. Here is a quick look at how to assemble this peach salad but, as always, you can find the full printable recipe in the recipe card at the end of this post.

  1. Dressing: Whisk together extra virgin olive oil, balsamic vinegar, honey, Dijon mustard, garlic powder and salt. You can also add ingredients to a jar and shake to combine.
  2. Arugula: Add baby arugula to a large bowl and toss with one-third of the dressing.
  3. Assembly: On a large serving platter or bowl, layer the arugula, followed by tomatoes, sliced peaches, toasted pine nuts and fresh basil leaves.
  4. Burrata: Cut open the burrata cheese and add to the salad.
  5. Dressing: Drizzle some of the remaining dressing over the salad right before serving and serve more alongside as needed.

Storage Information

  • Make Ahead: You can prepare the dressing and slice the peaches and tomatoes ahead of time. Store them separately in the fridge. The dressing can be made several days in advance but you will need to shake it thoroughly to re-emulsify if the ingredients have separated.
  • Storage: Store any leftover salad in an airtight container in the refrigerator for up to 2 days. Store the dressing separately.

This recipe is delicious as is but here as some tasty variations to consider:

  • Swap in mint or another herb for the basil and create a completely different flavor profile.
  • Replace the burrata with goat cheese or blue cheese for a tasty twist.
  • Add a little more honey to the dressing for a sweeter finish.
  • Substitute the balsamic vinegar with red wine vinegar or apple cider vinegar for a different flavored dressing.
  • Top the salad with prosciutto, grilled chicken or shrimp for a complete, filling meal.
  • Arugula can be replaced with spinach, spring mix or mixed greens.

What other greens can I use instead of arugula?

If you prefer a milder green, you can use baby spinach, mixed greens, or even romaine lettuce. Each will provide a different texture and flavor to the salad.

Can I add other fruits to this salad?

Do I have to use heirloom tomatoes?

Nope! Any tomatoes will work in this recipe. If using larger tomatoes, slice as directed. If using smaller tomatoes like cherry tomatoes, simply cut in half before adding to the salad.

Trish’s Tips

  • Use the freshest and most flavorful tomatoes and peaches you can find! Sweet and juicy tomatoes and peaches will yield the best tasting salad. Choose peaches that are firm but yield slightly to gentle pressure. This indicates ripeness and juiciness without being overripe.
  • Keep the dressing separate from the arugula until you’re ready to assemble and serve the salad. This will keep it from becoming soggy.
  • Make sure to whisk the dressing ingredients together until they are emulsified. You don’t want to see an oily layer resting on top.
  • To keep your basil from turning brown, gently tear the leaves into smaller pieces rather than cutting them.
  • Toast the pine nuts in a dry skillet over medium heat until golden brown and fragrant.

Ingredients

Balsamic Vinaigrette

  • ¼ cup extra virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 2 ½ teaspoons honey
  • 1 ½ teaspoons Dijon mustard
  • ¼ teaspoon garlic powder
  • ½ teaspoon salt

Peach Salad

  • 5 ounces baby arugula
  • 2-3 peaches sliced
  • 2 medium tomatoes sliced, I used heirloom
  • ¼ cup toasted pine nuts
  • 3 – 4 tablespoons fresh basil leaves a handful
  • 8 ounces burrata cheese

Instructions

Prepare Dressing

  • Whisk together all of the dressing ingredients until emulsified. You want to make sure that the oil has been fully incorporated and is no longer sitting on top of the other ingredients. You can also add ingredients to a jar with a lid and shake vigorously until emulsified.
    ¼ cup extra virgin olive oil, 3 tablespoons balsamic vinegar, 2 ½ teaspoons honey, 1 ½ teaspoons Dijon mustard, ¼ teaspoon garlic powder, ½ teaspoon salt

Assemble Salad

  • Add the arugula to a large bowl and toss it with â…“ of the dressing. Place the dressed arugula on the bottom of a large serving platter or plate.
    5 ounces baby arugula
  • Begin to layer on all of the remaining ingredients except for the burrata, beginning with the tomatoes and peaches and ending with the pine nuts and basil.
    2-3 peaches, 2 medium tomatoes, ¼ cup toasted pine nuts, 3 – 4 tablespoons fresh basil leaves
  • Cut open the ball(s) of burrata and add dollops to the top of the salad.
    8 ounces burrata cheese
  • Right before serving, drizzle some of the remaining dressing over the salad. Or, if you prefer, you can serve it alongside the salad. Enjoy!
