Waffles are a staple in our house. We typically enjoy them loaded with butter and real maple syrup and pair it with perfectly baked bacon. Breakfast bliss I tell ya.

When I’m feeling like changing up my game a little bit, I like to make yeast waffles. On a lazy Sunday morning, nothing beats these perfectly pillowy waffles that just melt in your mouth.

5 SECRETS TO GETTING DINNER ON THE TABLE...FAST!

And on a busy Thursday morning, nothing beats overnight blackberry yeast waffles…..with blackberry syrup. Yup. You can have the awesome flavor of a yeast waffle in just a few minutes when you put in the five minutes of work the night before. Awesome, right?

I’m sharing my easy blackberry syrup recipe too! It is SO good but if you don’t have the time or the berries…maple syrup is the way to go!

Yeast waffles are nothing more than regular waffles with a little bit of yeast thrown in there for extra oomph and flavor. Instead of using baking powder as the leavening agent, yeast does the work.

Because of the addition of yeast, you, of course, have to deal with the wait time, about an hour, before the batter can be used. If you have the time – great! If not, the great thing about this recipe is that the waffle batter can be made the night before and the yeast can do it’s work overnight. You choose!

These waffles are better-for-you, made with whole wheat flour and Almond Breeze Almondmilk. I used Almond Breeze Original Almondmilk Coconutmilk blend and it was fab.u.lous. Straight almondmilk or any blended almondmilk will work for this recipe. I use whatever I have in the pantry and pat myself on the back for keeping a couple cartons of shelf stable Almond Breeze on hand at all times.

Overnight Blackberry Yeast Waffles with Blackberry Syrup

Ingredients

  • 2 cups Almond Breeze Almondmilk or Almondmilk blend
  • 2 1/4 tsp instant dry yeast
  • 1/4 cup granulated sugar
  • 2 eggs room temperature
  • 1 tsp vanilla extract
  • 1/4 cup butter melted
  • 1/2 tsp salt
  • 1 cup whole wheat flour or white whole wheat flour
  • 1 1/4 cup all purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 cups blackberries lightly mashed

Blackberry Syrup

  • 3 cups fresh blackberries
  • 1 cup sugar
  • 3/4 cup water
  • 1 tsp lemon juice
  • 1/4 tsp salt

Instructions

  • Heat almondmilk to 100°F to 110°F.
  • Transfer almondmilk to a large bowl and sprinkle yeast on top.
  • Let stand for 10 minutes or until yeast has started to foam.
  • Whisk in sugar, eggs, vanilla extract, butter, and salt.
  • Stir in flour just until combined.
  • Cover and let rise for an hour undisturbed, or refrigerate overnight.
  • Fold in mashed blackberries.
  • Heat your waffle iron and cook according to the manufacturer's instructions.
  • Serve hot with butter and blackberry syrup.

Blackberry Syrup

  • Bring all ingredients to a boil and reduce to a simmer. Simmer for 15 minutes, stirring occasionally.
  • Use a masher to mash the blackberries and continue simmering for another 15 minutes or until syrup has thicken. (Syrup will thicken slightly as it cools)
  • Let syrup cool slightly before pressing through a fine mesh sieve.
  • Refrigerate until ready to serve.
