It’s Fish Taco night! This announcement is always greeted with cheers and excitement at my house  – we {HEART} tacos! This week I decided to switch up my usual recipe so that I could incorporate some extra veggies into our tacos and guess what? The boys and Chris both said they were THE BEST FISH TACOS EVER! Reece said, and I quote, “I like how you put all this extra stuff in here” as he’s pointing to the roasted corn – LOL! Chris said ” Trish – these are fantastic!” I just nodded my head. Of course they are honey. Would I feed you anything less than fantastic?

Bryce and I took care of the shopping earlier in the week after speech class. He, of course, brought “real puppy” along {yes – that is the puppy’s name}. Real Puppy was accidentally washed with a blue crayon last weekend so he has a slight blue tint to him now…I told Bryce that it just added character 🙂  We found everything we needed, plus a whole lot more!

We loaded up on veggies, picked up some Van de Kamp’s Fish Tenders for the tacos  and headed home. I was so excited to try something new with our fish tacos! Fish tacos make a regular appearance around here so I was a little nervous about changing it but I am SO glad I did! I added tons of flavor to our fish tacos by roasting a bag of Birds Eye Super Sweet Corn. I poured the bag onto a baking sheet and threw it under the broiler for a few minutes to add some beautiful color to these amazing tacos. I added tomatoes, onion, lime, cilantro, and red bell pepper to really pack in an awesome flavor punch. Anytime I’m serving my family dinner that is as beautiful as this – I know I’m doing the right thing!

These Fish Tacos are loaded with fresh flavors from the Roasted Corn Salsa and the creamy avocado sauce. The cole slaw mix and crispy fish tenders provide a perfectly satisfying crunch.

Because Fish Tacos are a weeknight meal I like to take a few shortcuts in the kitchen to speed up the process. My family loves Van de Kamps Crispy Fish Tenders and they make taco night even easier! While the Crispy Fish Tenders are baking I got my taco-building station all set up.

Layer on the goodness and pretty soon I have a platter full of fish tacos – fiesta time! I am so not joking when I say it was hard to get these pictures because the boys kept putting their hands in the way trying to get to the tacos…poor things were starving 😉

Fish Tacos with Roasted Corn Salsa

Ingredients

  • 1 18.1 oz box Van de Kamp Crispy Fish Tenders
  • 8 corn tortillas
  • 2 cups tri-color cole slaw mix
  • queso fresco
  • Roasted Corn Salsa:
  • 1 12 oz bag Birds Eye Steamfresh Super Sweet Corn
  • 1/3 cup diced Red Bell Pepper
  • 1/4 cup diced red onion
  • 2 limes juiced
  • 1 Roma tomato diced
  • 3/4 cup chopped cilantro
  • salt and pepper to taste
  • Creamy Avocado Sauce:
  • 1 ripe avocado
  • 1/4 cup light sour cream
  • 1/2 lime juiced

Instructions

  • Preheat oven according to instructions.
  • Pour the bag of Birds Eye corn onto a baking sheet. Broil for 10 minutes stirring occasionally, until corn is cooked through and nicely golden.
  • Combine corn, lime juice, red onion, red bell pepper, tomato, cilantro, salt and pepper. Stir until combined and refrigerate.
  • Place fish tenders in the oven and bake according to instructions.
  • Meanwhile, mash avocado and combine with sour cream and lime juice. Transfer to a ziploc bag and refrigerate until needed.
  • To assemble tacos, warm tortillas in microwave for 30 seconds on 50% power. Layer cole slaw mix, fish tenders, and roasted corn salsa. Snip the corner of the avocado bag and drizzle on top. Sprinkle crumbled queso fresco on top and serve immediately.

    Love it! Mixing the sauce with the corn salsa and adding in the Fresco cheese is cleaner and still yummy,?
