Christmas break is over, the kids are back in school, and I’m (slightly reluctantly) back at work. It was the most awesome vacation, riddled with many movies, lazy days, and some much-needed rest. I hope you enjoyed some time with your family and were able to get in some restful days before returning back to work as well. I think we all need that from time to time.

I’m excited to be back today, sharing these delicious dark chocolate toffee almond clusters with you. Just before I went on vacation, I shared these Rocky Road Clusters with you that instantly became a huge hit. Not just with you guys though, my boys INHALED them and friends and family that stopped by gobbled up a double batch in no time.

I immediately started thinking about new combinations of flavors for clusters and with January on the horizon (and now here!), I knew many of you would be looking for slightly less indulgent treats that still taste totally decadent.

I served these up for our New Year’s Eve party but they would make the most excellent snack for any occasion including football parties, potlucks, and movie night. Instead of using the vegetable oil that I used in the rocky road clusters, I opted for coconut oil, giving these clusters an even bigger nutritional advantage.

In addition to the coconut oil, I used heart-healthy Blue Diamond almonds, opting for their low sodium, lightly salted almonds. Good call. The small amount of salt is the perfect counterbalance to the deep, rich chocolate flavor.

You’ll notice a small amount of butterscotch chips in the ingredients list. I love the flavor produced when chocolate and butterscotch are combined and the butterscotch chips really play well with the crunchy and buttery toffee chips that are present throughout the clusters.

All in all, a total home run. I love that these clusters are a sweet snack that I can enjoy immensely and feel good about at the same time.

Ingredients

  • 10 oz dark chocolate chips 53% cacao
  • 1/2 cup butterscotch chips
  • 1 tbsp coconut oil vegetable oil or shortening may be substituted
  • 1 cup toffee bits
  • 6 oz Blue Diamond Lightly Salted Almonds 1 container

Instructions

  • Line a large baking sheet with wax paper.
  • Melt chocolate chips, butterscotch chips and coconut oil together in a large microwave-safe container. I used a Pyrex glass measuring cup.
  • Heat on high for 30 seconds, stir, repeat, until chips are melted and smooth.
  • Stir in the toffee bits and almonds.
  • Drop spoonfuls of the mixture onto the wax paper. You can make them as large or as small as you like.
  • Let set up in the refrigerator for 15 minutes before packing. Store leftovers in an airtight container.
