This Berry Champagne Punch is the perfect way to kick off New Year’s Eve! This punch is super easy to prepare and is made with fresh berries and champagne or sparkling wine. Perfect for Valentine’s Day, Easter brunch and Mother’s Day too!
I have been so busy this week recovering from the long holiday weekend and I realized just this morning, that New Year’s Eve is just a few days away – yikes! I wanted to share this easy Berry Champagne Punch with y’all because it is just so incredibly gorgeous and tastes amazing as well.
This is a great recipe to have on hand for entertaining, whether it’s for New Year’s Eve or Easter brunch. It’s a combination of a few simple ingredients that really come together to WOW your taste buds.
It starts with a simple syrup: equal parts sugar and water heated until the sugar has dissolved. The simple syrup then gets mixed with fresh berries (or frozen berries will work in a pinch – just thaw them first!).
Just look at that vibrant color! Next I take each of the purees and strain them with a fine mesh strainer. This is what you’re left with. Let me tell you, these look incredible at a party!
Add a small amount of each berry puree to each champagne flute or wine glass with a small amount of champagne or sparkling wine. A quick stir to mix the two together and then top it off with more champagne. I like to add a bit of lemon-lime soda to the top of each flute as well. Extra fizz and all that. Plus, I like my drinks sweet 🙂
Berry Champagne Punch
- 1 cup granulated sugar
- 1 cup water
- 6 oz fresh raspberries
- 6 oz fresh blackberries
- 6 oz fresh strawberries
- 1 bottle champagne or sparkling wine
- 2 liters lemon-lime soda
- fresh berries for garnish optional
- Combine granulated sugar and water in a small saucepan over medium heat. Stir occasionally until sugar has dissolved. Remove from heat and let cool. (Store in refrigerator.)
- Combine raspberries and 1/4 cup of simple syrup and puree until smooth. I use my immersion blender for this task.
- Repeat with blackberries and strawberries.
- Strain through a fine mesh strainer to eliminate seeds.
- Add one tablespoon of berry puree to a champagne flute or wine glass.
- Fill glass half-way full with champagne. Gently stir to combine.
- Top with champagne and/or lemon-lime soda.
