Tomorrow is the BIG GAME! Our fridge is packed, the menu is set, and the guests are confirmed. I just got off the phone with my aunt who will be coming over and she said “Trish, I’m not really that into the game…” and I was like “Duh! It’s all about the food!”

Seriously, you don’t have to like football one little bit to get excited for the Super Bowl! I’m just looking forward to all the deliciousness that will be gracing our table and of course it doesn’t hurt that our 49ers are playing – that’s just a bonus 🙂

One particular food that makes an appearance at every party is Avocados from Mexico – we just love avocados anyway we can get them! Whether we’re serving 7-layer dip or just straight up awesome guacamole – with all that creamy goodness you just can’t go wrong 🙂  Another one of my favorite ways to enjoy avocados is in this super yummy salsa. Make it a salad by adding in some cucumber – it’s delicious!

Avocado and Feta Salsa

Ingredients

  • 3 roma tomatoes seeded and chopped
  • 3 avocados chopped
  • 1/4 cup cilantro chopped
  • 1/4 red onion diced
  • 1 clove garlic minced
  • 1 tbsp fresh lime juice
  • 1 tbsp red wine vinegar
  • 4 oz feta cheese crumbled

Instructions

  • Gently combine all ingredients.
  • Cover and chill for a minimum of 2 hours before serving.
