Next comes a layer of skinny no-bake cheesecake made with just three ingredients: low-fat cream cheese, vanilla extra, and lite whipped topping. Easy, breezy, delish. Another layer of chocolate pudding and then a final layer of whipped topping does the trick.

I topped the entire icebox cake with fresh raspberries and chocolate shavings, cause, duh, more chocolate.

Skinny Chocolate Raspberry Icebox Cake

Ingredients

  • 50 full sheets of graham crackers

Chocolate Pudding Layers

  • 2.8 oz instant chocolate pudding mix sugar free, fat free
  • 3 Weight Watchers® GIANT Chocolate Fudge Ice Cream Bars melted (about 1 cup melted low-fat ice cream)
  • 3 cups cold non-fat milk

Cheesecake Layer

  • 8 oz light cream cheese softened
  • 1 tsp vanilla or almond extract
  • 8 oz lite whipped topping

Additional ingredients

  • 1 pint fresh raspberries
  • 8 oz lite whipped topping
  • chocolate shavings

Instructions

Chocolate Pudding Layers

  • Beat pudding mix, melted ice cream, and milk together for about two minutes. Refrigerate pudding for at least 30 minutes before continuing on.

Cheesecake Layer

  • Beat cream cheese until light and fluffy, about three minutes. Beat in vanilla extract.
  • Fold in whipped topping. Set aside.

Assembly

  • Line a 9 x 13 inch baking dish with graham crackers. Break up as you need to. I used a little less than 10 full sheets per layer.
  • Spread half of the pudding mixture on top of the graham crackers.
  • Place another layer of graham crackers on top of the pudding.
  • Spread cheesecake layer on top of the graham crackers.
  • Place another layer of graham crackers on top of the cheesecake.
  • Spread remaining half of the pudding mixture on top of the graham crackers.
  • Place another layer of graham crackers on top of the pudding.
  • Spread remaining 8 oz container of lite whipped topping on top of the graham crackers.
  • Top with raspberries and chocolate shavings.
  • Refrigerate until ready to serve.
