Time for a little Easter fun today!  I brought these little treats to both Reece’s and Bryce’s classes today and let me tell you, there is nothing more satisfying or more gratifying than the sight of delighted little faces.  It makes the little extra effort it took to prepare these baskets so, so worth it.

I wanted to do something really fun and after looking at some of my more recent posts I was inspired by my Reese’s Peanut Butter Cookie Dough Cookie Cups from a couple of weeks ago.  Do you guys remember these?


One of my favorite parts of these cookie cups was coating the rim with chocolate jimmies.  I really thought it added a little wow factor to the cookie cups.  It occured to me that I could total do the same thing with green jimmies and it would give the effect of a nest or Easter basket.

I couldn’t resist the Easter baskets :)

When I saw the pink/purple/white jimmies I HAD to pick them up as well.  Bryce’s class is like 75% girls.  Totally nailed it because ALL the girls wanted the “pretty” baskets.  I thought they were all pretty :)

I went with the Rainbow Twizzlers because they are so bright and fun and “bendy”.  They work really well for the Easter baskets! I picked up a couple different bags of jelly beans and filled the baskets with jelly bean ‘eggs”.  This was, not surprisingly, the kid’s favorite part :)

I got asked more than once, “You mean we can eat the WHOLE thing???” Sure can!

Bright and cheerful, these Easter Basket Cookie Cups are sure to delight everyone this Easter season!
Recipe type: Dessert
Serves: 24 Easter Basket Cookie Cups
  • 1 roll (16.5 oz) Pillsbury® refrigerated sugar cookie dough
  • ⅓ cup all-purpose flour
  • 6 oz white candy coating (I used CandiQuik)
  • ½ cup green jimmies or sprinkles (or any other color you want)
  • Twizzlers twists - rainbow
  • jelly beans
  1. Preheat oven to 350°F.
  2. Coat a mini muffin tin with nonstick cooking spray.
  3. In a large bowl, combine cookie dough and all purpose flour. Knead together until well blended.
  4. Shape dough into one inch balls. Press cookie dough in bottom and up the sides of each muffin cup, forming cup shape.
  5. Bake 10 to 12 minutes or until edges are just starting to turn golden brown.
  6. Remove from oven and let cool for at least ten minutes before gently twisting to remove from pan. Place on rack and let cool completely.
  7. Melt candy coating according to package directions.
  8. Place jimmies in a separate shallow bowl or ramekin.
  9. Gently dip cookie cups in melted candy coating and then immediately dip into jimmies. Place cookie cups on a waxed paper lined baking sheet and let set up.
  10. Cut Twizzlers in half.
  11. Bend to fit inside cookie cup.
  12. Press a jelly bean into the bottom of the cookie cup securing the Twizzler handle in place.
  13. Fill with 3-5 more jelly beans.
  14. Repeat until finished. Go make someone smile!

  5. When we were growing up, my brother and I were obsessed with fun, cute treats like these! We always looked for the Women’s Day magazines (I think those were the ones at least) during the summer with the cakes decorated to look like pools or oceans with Teddy Grahams lounging on Lifesaver inner tubes or bubble gum beach towels. Your little baskets totally remind me of that — and I’d definitely take a “pretty” basket too. Purple is my favorite color!!
