Rainbow Sugar Cookie Bark made with refrigerated sugar cookie dough and candy – get ready to taste the rainbow!

So apparently we’re not done with rainbows in our house yet…The other night I was lying in bed thinking of recipes and I envisioned this super playful and fun rainbow bark and I knew I had to make it! How cool would it be to eat candy that looked like it was broken off from a rainbow? There are so many different candies that you could use for this bark but I went with Skittles and Starburst Jelly Beans because they had all the different colors and shades I was looking for. I also picked up some star sprinkles in the dollar section at Target.

Bryce is at Grandma and Grandpa’s for a few days so I put Reece to work sorting…seriously, this is Reece’s dream job. It worked out great for me because he also got in a snack ;) {I don’t know why he doesn’t have a shirt on…it was all of 70 degrees…}

Once Reece was done sorting I put each color into a separate container to make things easier…

I had originally planned on just using Vanilla CandiQuik but got inspired by Dorothy’s Sugar Cookie Bark where she used a sugar cookie pouch mix. It looked phenomenal but I knew my boys would love it if all this candy was sitting on a giant sugar cookie so I actually rolled out some refrigerated dough and baked it up. You should have seen Reece’s eyes when I pulled that giant cookie out of the oven!

To make sure I didn’t stress myself out, I heated up the CandiQuik in two batches so I’d have plenty of time to lay out the candy before it set up. This made it super easy! I would do a couple rows at a time and then add some more…

I ended up doing two “rainbows”. Here’s what it looked like with all the rows on:

Pretty spectacular right? Reece just kept asking “So we really get to eat this?” – I think he thought I’d finally lost it! Next all you need to do is let the CandiQuik set up and then break it into pieces – that may have been the most fun! We tried to get multiple colors onto each piece so they really looked like pieces of a rainbow.

Pretty pretty isn’t it?

Ingredients
- 1 roll refrigerated sugar cookie dough {I used Pillsbury}
- 16 oz of vanilla flavored candy coating {I used CandiQuik}
- 2 cups rainbow-colored candies
Instructions
- Roll out the sugar cookie dough to 1/4 inch thickness on a parchment-lined cookie sheet. Flour your rolling pin and dough as necessary to keep from sticking.
- Bake according to directions and remove just before the cookie turns brown.
- Let cool for a few minutes.
- Divide candy coating in half and melt first batch.
- Spread with a knife or spoon on top of sugar cookie and sprinkle on candy.
- Melt second half of candy coating and repeat. Let candy coating set up before breaking apart.

Hi there Karen! I use the CandiQuik brand and it’s located right next to the chocolate chips. If you can’t find it you can totally melt white chocolate or vanilla chips and it will work the same. Enjoy the recipe!
