These cinnamon rolls are the brain-child of Bryce. When I asked him what s’mores recipes he wanted me to make – S’mores Cinnamon Rolls were at the top of his list.

He is such a smartie 🙂

It took me a little while to figure out how I wanted to make them so that I could include all the proper s’mores elements: graham crackers, marshmallows, and chocolate.

These rolls turned out even better than I expected and were devoured by the boys and my husband. (I even got a text from my husband who told me how amazing these were!)

I started with my favorite cinnamon roll recipe which, by the way, can be made overnight. I slathered on Nutella {swoon!}, and mixed graham cracker crumbs right in with the sugar and cinnamon.

Next were the marshmallows and a drizzle of butter. Yep, these are super low-cal 😉 But worth it – I promise you!

I let the rolls rise and the boys were just giddy with excitement at seeing those marshmallows peeking out the top. Who can blame them?

The marshmallows toasted up so pretty in the oven too!

Next, it was time to frost. I knew my go-to cream cheese frosting was not going to cut it. Not for s’mores cinnamon rolls. No, I needed a marshmallow frosting and this outrageously awesome marshmallow cream cheese frosting was born. So creamy and delicious and not overly sweet – which is perfect because these rolls have a lot going on.

I quickly realized that the marshmallow frosting needed some friends so a quick sprinkle of graham cracker crumbs and mini chocolate chips was the perfect finish to these rolls.

S’mores Cinnamon Rolls with Marshmallow Cream Cheese Frosting

Ingredients

For rolls:

  • 4 1/2 tsp active dry yeast or 2 packages
  • 1/2 cup warm milk
  • 3 eggs
  • 2 tsp sugar divided
  • 1/2 cup sugar
  • 1 1/2 tsp salt
  • 4 1/2 cups AP flour
  • 1/2 cup unsalted butter melted

Filling:

  • 1/3 cup brown sugar
  • 3/4 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 tbsp ground cinnamon
  • 3/4 cup Nutella
  • 1 cup miniature marshmallows
  • 1/2 cup butter melted

Marshmallow Cream Cheese Frosting

  • 7 oz marshmallow creme 1 jar
  • 8 oz cream cheese room temperature
  • 1/2 tsp vanilla extract

Topping

  • 1/4 cup graham cracker crumbs
  • 1/2 cup mini semi-sweet chocolate chips

Instructions

  • For the rolls:
  • Mix together 2 tsp sugar, warm milk, and yeast in a mixer bowl. Let stand for five minutes.
  • Beat eggs, sugar, and salt until well combined.
  • Add egg mixture to yeast mixture and whisk to combine.
  • Add 1 cup of flour and continue mixing until smooth.
  • Pour in the melted butter and mix well.
  • Continue adding the remaining 3 1/2 cups of flour, 1/2 cup at a time until dough is stiff.
  • Move the dough to a greased bowl and cover with a towel or plastic wrap. Place in a warm area and let rise until doubled in size. Approximately 1 hour.
  • Meanwhile, combine the brown sugar, graham cracker crumbs, sugar, and cinnamon.
  • Once dough has risen, lightly flour a large cutting board. Punch down down and roll out to approximately 12 x 16 inches.
  • Spread on Nutella.
  • Sprinkle on graham cracker/sugar mixture.
  • Sprinkle on marshmallows and drizzle melted butter over the top.
  • Starting on a long side, roll up the dough up into a cylinder and pinch the edge to close. Cut the cylinder in half and then cut each half into five rolls for a total of ten rolls.
  • Butter a 9 x 13 baking dish and place rolls in dish leaving a little room around each roll to allow for rising. Let the rolls rise for another hour.
  • Preheat oven to 375 degrees. Bake rolls for 20-25 minutes until golden brown in color
  • While rolls are baking, prepare the marshmallow cream cheese frosting.
  • Beat cream cheese until light and fluffy. Beat in marshmallow creme and vanilla.
  • Let rolls cool slightly before frosting.
  • Sprinkle with graham cracker crumbs and mini chocolate chips.
