I scored some gorgeous peaches from our community garden last week. Perfectly ripe and ready for picking. There is just nothing like fresh peaches! My peaches were ripe over a month ago and I have been seriously missing the sweet, juicy flavors of fresh-picked peaches so this was just what I needed.

I knew that most of the peaches would be gone that afternoon because my boys take after their mama and love a good peach so I tucked a few away for this cooler.

With the awesomely fresh flavors of summer, this cooler is exactly what you want when it’s time for a little refreshment.

A perfectly ripe peach is all you need to add a touch of sweetness to this drink. Peeled and pitted, the peach is blended with coconut water and rum, creating this stunning peachy color.

I topped it with a sprig of fresh mint straight from our garden. A couple colorful straws turned this drink from pretty to festive in an instant.

As you bring the straw or glass towards your lips, the sweet aroma of fresh peaches greets you first. It’s heavenly. Peaches and coconut go together perfectly and they are complemented by the sweetness of the rum.

This cocktail is summer in a glass and the best part is it’s just three ingredients. Quick and easy – just how I like it!

Ingredients

  • 1 peach ripe
  • 1 cup coconut water
  • 1/4 cup white rum
  • peach slices and fresh mint sprigs to garnish optional

Instructions

  • Peel, pit and slice the peach.
  • Place peach slices, coconut water and rum in a blender. Pour into 2 ice-filled glasses and garnish with fresh peach slices

    This looks fabulous Trish! So smart of you to save some peaches from your boys. They’re one of my favorite things about summer (especially baked into a pie!), but a sweet drink sounds SO good right now!
